  • 1 cup granulated sugar
  • 3 large eggs
  • ¾ cup pure pumpkin puree
  • 4 tbsp confectioners’ sugar (for dusting towel)

  • 2 tbsp cream cheese, room temperature

Evenly spread the cake batter over the prepared baking sheet. Bake for approximately 10-12 minutes, or until the cake is golden brown and springs back when lightly touched in the center. Beat on medium-high speed until medium peaks form. Add 2 tablespoons of granulated sugar and the vanilla extract, then continue to beat until the filling is smooth and fluffy.
  7. Fill, Re-Roll & Chill: Once the cake is completely cool, gently unroll it from the towel. Place the unrolled cake on a fresh sheet of parchment paper. Evenly spread the cream cheese filling over the entire surface of the cake, leaving a small border around the edges. Using the parchment paper for assistance, gently re-roll the cake into a tight spiral. Transfer the rolled cake, seam-side down, to a serving platter or baking sheet.
