- 1 pound 15 bean soup mix (do not use the seasoning packet)
- 3 tablespoons extra virgin olive oil
- 2 cups sweet onion, diced
- 2 celery stalks, diced
- 3 carrots, peeled and diced
- 4 garlic cloves, minced
- 1/2 of a red bell pepper, seeds removed, diced
- 4 cups vegetable broth or vegetable stock
- 3 cups water
- 8 ounces tomato sauce
- 1 – 15 ounce can of diced tomatoes, undrained
- 1/2 teaspoon turmeric
- 1 teaspoon paprika
- 2 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne red pepper, optional
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 bay leaves
- Fresh Parmesan cheese, fresh parsley, oyster crackers and crushed red pepper flakes, for garnish
