A Sweet Start to the New Year: Reflections and Family Joy
As we embark on a new year, I want to extend my warmest wishes to all of you! Happy New Year! I recently took a much-needed break from the constant buzz of blogging and the internet in general. It’s incredibly important to step away, recharge, and reconnect with what truly matters. Our family Christmas was particularly memorable and filled with immense joy. My sister, who is expecting her first baby (hooray, excited to be an aunt again!), and her husband visited, making our holiday gathering extra special. Witnessing the anticipation and excitement of new life added an extra layer of warmth to our celebrations.
For my four-year-old, Theo, this was the first year he truly understood and remembered the magic of Christmas. His wide-eyed wonder and palpable excitement for Santa made the entire season absolutely enchanting. Seeing the holidays through the innocent eyes of a child is truly a gift, making it a Christmas I will cherish for many years to come.

Santa certainly delivered some exciting presents this year! The kids were thrilled to receive a trampoline and a mountain of glitter glue. While their joy was undeniable, I must admit, these particular gifts made me pause and seriously question whether I had personally landed on Santa’s “nice list.” Both items promise endless entertainment, but also a corresponding level of parental supervision and an impressive amount of cleanup – a small price to pay for those magical childhood smiles, I suppose!
Navigating the Glorious Chaos: Toddler Adventures with Everett
Our youngest, Everett, has officially blossomed into a wonderfully spirited two-year-old. This dynamic and often unpredictable energy is another significant reason for my recent blogging hiatus. By the time 7 PM rolls around, instead of settling down to write about his latest comical (or utterly bewildering) antics, I’m usually found in a deeply immersive bubble bath, mindlessly watching “Friends” reruns until a sensible bedtime (is 8 PM still reasonable?). Life with a toddler is a beautiful, relentless, and occasionally exhausting adventure.

Everett is genuinely a sweet, loving, and remarkably clever little guy, but keeping him safe and steering him away from mischievous and, frankly, sometimes disgusting activities, is a full-time job. It’s a constant stream of parental interventions: “If you keep licking the playground equipment, we are going straight home,” “No, sweetie, we do NOT put our spoon in our bum,” and the perpetually necessary, “Absolutely NOT, we DON’T drink the toilet water, the dog water, or any puddle water!” The sheer inventiveness of a two-year-old in finding new forms of mischief is truly astonishing and keeps me on my toes every single moment.
His adventures in naughtiness are legendary. He once managed to put my favorite lip balm in his bum (a tragic loss for my chapped lips), tried to stick his private parts into an electric socket (a moment that sent shivers down my spine), meticulously scooped toilet water into his toy kitchen sink, and countless other feats of toddler ingenuity you genuinely couldn’t even dream of. I’m quite certain the nurse hotline recognizes my voice by now; I probably have them on speed dial. There are days I feel like I’m one phone call away from social services showing up at my door, just to check on the situation – a thought that is both terrifying and, in its utter absurdity, a source of dark parental humor.
He is, without fail, always two gleeful steps ahead of my (often exasperated, sometimes desperate) attempts to maintain order and sanity.

This past week offered a particularly vivid example of Everett’s unique talents. He woke up quietly at 5:30 AM – a silence that, for any parent, immediately triggers a deep sense of dread. By 6 o’clock, when I finally managed to drag myself out of bed, the scene was already set: he had “washed” his hair with a generous amount of bathroom hand soap (though, notably, neglected the rinsing part), generously added a fistful of kosher salt from my stove-side bowl to his soapy hair, meticulously de-potted my husband Adarsh’s favorite tropical indoor tree (soil everywhere, of course), and transformed my canister of granulated sugar into an impromptu sandbox for his collection of toy animals. And mind you, that’s just what we know about! This, dear seasoned parents, is my life right now. Please, if you have any wisdom, send me promises of future peaceful, quiet times. And, equally important, please send carbs. Lots and lots of glorious carbs.

10-12 (per loaf, recipe makes 2 loaves)
Ingredients
- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder (natural or Dutch-processed)
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp kosher salt
- 2 cups shredded zucchini (about 2 medium zucchinis; lightly packed, excess moisture gently squeezed out)
- ¾ cup vegetable oil (or other neutral-flavored oil like canola or grapeseed)
- ¾ cup sour cream or full-fat Greek yogurt (adds incredible moisture)
- ½ cup whole milk
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 cup coarsely chopped dark chocolate or dark chocolate chips (60-70% cacao works best)
Instructions
-
Prepare Your Oven and Pans: Preheat your oven to 350ºF (175ºC). Generously grease and flour two standard loaf pans (9×5 inches or similar), or for easier removal and cleanup, line them with parchment paper, allowing an overhang on the longer sides. This parchment “sling” makes lifting the baked loaves out effortless.
-
Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and kosher salt. Whisk well to ensure all ingredients are evenly distributed and there are no lumps, especially from the cocoa.
-
Mix Wet Ingredients: In a separate medium bowl, whisk together the shredded zucchini, vegetable oil, sour cream (or Greek yogurt), whole milk, large eggs, and pure vanilla extract until everything is smoothly combined.
-
Combine Wet and Dry: Pour the wet ingredient mixture into the large bowl containing the dry ingredients. Using a rubber spatula, gently fold the mixture together until it is about 80% combined. It’s okay if a few streaks of flour are still visible at this stage; this helps prevent overmixing, which can lead to a tough, dry bread.
-
Fold in Chocolate: Add the coarsely chopped dark chocolate or chocolate chips to the batter. Continue to gently fold until the chocolate is just incorporated and the batter appears uniform, but again, be careful not to overmix. A light hand ensures a tender, moist crumb.
-
Bake the Loaves: Divide the batter evenly between the two prepared loaf pans. Place the pans in the center of your preheated oven and bake for approximately 40-50 minutes. The bread is done when the top feels springy when lightly pressed with your finger, and a wooden skewer or toothpick inserted into the very center of a loaf comes out clean or with a few moist crumbs attached (no wet batter).
-
Cool and Serve: Once baked, remove the loaves from the oven and let them cool in their pans on a wire rack for about 10-15 minutes. This allows them to firm up slightly before handling. Then, carefully lift the loaves out of the pans using the parchment paper overhang and transfer them directly to the wire rack to cool completely before slicing and serving. Cooling completely is crucial for the best texture and flavor.
