Ingredients

  • 5 cups chicken broth
  • 3 cloves garlic , minced
  • 1/2 red onion, diced
  • 1.5 pounds chicken breasts, boneless, skinless
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper {optional for spice}
  • 1 teaspoon Mexican oregano, or regular oregano
  • 1 can diced tomatoes , {you can also use fire roasted}
  • 1 can diced chiles
  • 2 cups frozen corn
  • 1 can black beans, drained, rinsed
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped

Instructions

  • Carefully place the chicken broth, minced garlic, and diced red onion into the Instant Pot insert. Arrange the boneless, skinless chicken breasts on top of these ingredients. Evenly sprinkle all the chili powder, cumin, paprika, cayenne pepper (if using), and Mexican oregano over the chicken.
  • Next, add the can of diced tomatoes (including their juices), the can of diced green chiles, the frozen corn, and the drained and rinsed black beans. Do not stir at this point, as it can sometimes prevent the Instant Pot from coming to pressure correctly.
  • Securely place the lid on your Instant Pot and ensure it is locked into position. Set the steam release valve to the “Sealing” position. Select the MANUAL (or Pressure Cook) HIGH pressure setting and set the cooking time for 5 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes. This means you do nothing; the pot will slowly depressurize on its own. After 10 minutes, carefully switch the steam release valve to the “Venting” position for a quick release of any remaining pressure. Use a kitchen towel or oven mitt to protect your hand from the steam.
  • Once the float valve has dropped and all pressure has been released, carefully remove the lid, opening it away from your face to avoid steam. Gently remove the cooked chicken breasts and place them on a cutting board. Using two forks, shred the chicken until it’s in bite-sized pieces, then return it to the pot. Stir all the ingredients together thoroughly.
  • Finally, add the fresh lime juice and chopped cilantro to the soup and stir once more. Taste the soup and adjust the seasonings as needed, adding salt and pepper to your preference. Ladle the hearty soup into individual bowls and serve immediately, garnished generously with your favorite toppings such as shredded cheese, crunchy tortilla strips, extra cilantro, red onion, jalapeños, and creamy avocado slices.

  • It’s important to remember that the Instant Pot requires some time to come up to pressure before the actual 5-minute MANUAL HIGH cook time begins. Factor this heating time into your total preparation. Along with the 10 minutes of natural pressure release and the subsequent quick release, this recipe typically takes about 25-30 minutes total from start to serving, making it an incredibly quick meal.
  • Always adjust the seasonings to your personal taste. I recommend starting with the quantities listed in the recipe, then tasting the soup after it’s fully cooked and adding more salt, pepper, or other spices as needed to achieve your desired flavor balance.
  • For a deeper, more developed flavor profile, you can utilize your Instant Pot’s “Sauté” function before pressure cooking. Sauté the minced garlic and diced red onion in a tablespoon of olive oil for about 3-5 minutes until softened. Then, add the dry spices (chili powder, cumin, paprika, cayenne, oregano) and cook for another minute until fragrant. It’s crucial to deglaze the pot after sautéing to prevent a “burn” notice; add about 1/2 cup of chicken broth and scrape the bottom of the pot thoroughly with a wooden spoon to loosen any browned bits. After deglazing, proceed with adding the remaining ingredients as directed.
