Mint Chocolate Brownies Recipe

By: Jennifer Pallian BSc, RD

These Mint Chocolate Brownies are the ultimate festive and indulgent treat for St. Patrick’s Day. With layers of rich chocolate, refreshing mint frosting, and a decadent chocolate topping, they are sure to be a crowd-pleaser.

  • Prep Time: 30 minutes
  • Cook Time: 40 minutes
  • Servings: 16

Ingredients

For St. Patrick’s Day Mint Brownies

  • 1 batch chocolate brownies

For Green Peppermint Frosting

  • ½ cup unsalted butter
  • 2 ½ cups confectioners’ sugar
  • 1 tsp peppermint extract
  • 2 tbsp whipping cream
  • 3-4 drops green food coloring

For Chocolate Layer

  • 8 oz chopped dark chocolate
  • 2 tbsp vegetable oil

Instructions

  1. Prepare your favorite brownie recipe and allow them to cool completely in the pan before proceeding.

For Peppermint Frosting

  1. In the bowl of a stand mixer, using the whisk attachment, beat the unsalted butter with confectioners’ sugar, peppermint extract, whipping cream, and a few drops of green food coloring on high speed for a full 5 minutes until the frosting is very fluffy and light.
  2. Carefully spread this vibrant green frosting evenly over the completely cooled brownies. For an exceptionally smooth finish, you can use the bottom of an oiled loaf pan to gently smooth the surface.
  3. Freeze the brownies until the frosting layer is firm, which will help in applying the chocolate topping.

For Chocolate Layer

  1. In a microwave-safe bowl, combine the chopped dark chocolate and vegetable oil. Microwave on medium power for approximately 2 minutes, stirring occasionally, until the chocolate is nearly melted with only a few small lumps remaining. Stir well to ensure the chocolate finishes melting and becomes perfectly smooth.
  2. While the chocolate is still warm and runny, pour it over the firm, cold peppermint layer on your brownies. Gently tilt the pan to allow the chocolate to spread evenly across the entire surface. This technique helps create a much smoother and more professional finish than trying to spread it with a knife.
  3. Allow the chocolate layer to set completely before slicing and serving. You can place the pan back in the freezer for a short period to speed up this process.

Notes

You can substitute chocolate bars with chocolate chips if preferred. Approximately 8 oz of chopped chocolate by weight equates to about 1 1/3 cups of chocolate chips.

Why Go Green? The Symbolism of St. Patrick’s Day Desserts

The color green is synonymous with St. Patrick’s Day, deeply rooted in Irish folklore and history. It represents the lush landscapes of Ireland, often referred to as the Emerald Isle, and symbolizes spring, renewal, and of course, good luck. The shamrock, a three-leaf clover, is another powerful emblem, believed to have been used by St. Patrick himself to explain the Holy Trinity. By incorporating green into our desserts, we’re not just making them visually appealing; we’re actively participating in these traditions, bringing good fortune and festive cheer to our tables. Beyond green, elements like gold coins (from leprechaun legends), rainbows, and four-leaf clovers also inspire creative and delicious decorations, turning simple sweets into magical tokens of the holiday.

Tips for Crafting Perfect St. Patrick’s Day Treats

Creating show-stopping green desserts doesn’t have to be complicated. Here are a few tips to ensure your St. Patrick’s Day treats are both delicious and visually stunning:

  • Food Coloring Wisely: For vibrant greens, gel food colorings are usually more potent than liquid ones, requiring less to achieve intense hues. If you prefer natural options, spinach powder or matcha can lend a beautiful, subtle green, though they might impart a slight flavor.
  • Embrace Themes: Don’t limit yourself to just green! Incorporate gold sprinkles, edible glitter, or rainbow accents to represent pots of gold and rainbows. Cookie cutters in shamrock or leprechaun hat shapes can instantly transform a simple dough.
  • Make-Ahead Magic: Many desserts, like no-bake pies, fudge, and even frosted cookies, can be prepared a day or two in advance. This minimizes stress on the day of your celebration, allowing you to enjoy the festivities more.
  • Involve the Family: St. Patrick’s Day baking is a fantastic family activity. Kids love helping with simple tasks like mixing, decorating, or cutting out shapes. It’s a wonderful way to create lasting memories.
  • Balance Flavors: While green is the theme, ensure the flavors are well-balanced. Mint and chocolate are classic pairings, but lemon-lime, pistachios, or even subtle apple can offer refreshing alternatives.

Beyond Desserts: Expanding Your Green Feast

While desserts are undoubtedly the highlight, extending the green theme to other parts of your meal can create an even more immersive St. Patrick’s Day experience. Consider serving traditional Irish dishes like corned beef and cabbage, but also look for opportunities to add green sides. Think vibrant salads with fresh greens, roasted asparagus, or even green-tinted mashed potatoes. A refreshing mint limeade or a classic Irish coffee (with a green sugar rim!) can also perfectly complement your festive spread. Remember, St. Patrick’s Day is about embracing joy, community, and a touch of playful magic, and these green desserts are the perfect way to cap off your celebration.

From the refreshing tang of a kiwi lime tart to the rich indulgence of mint chocolate brownies, these green desserts offer a delightful way to celebrate St. Patrick’s Day. Each recipe brings its unique charm, flavor, and visual appeal, ensuring there’s something to tempt every palate. Whether you’re planning a grand party or a quiet family gathering, these festive treats are guaranteed to bring smiles, laughter, and a generous helping of Irish cheer. So, pick your favorites, get baking, and make this St. Patrick’s Day truly unforgettable with a spectrum of emerald-hued delights!
