Embracing Culinary Inspiration and the Joy of Creation
Hello, wonderful friends! As I sit here, perhaps a little later than planned, on the cusp of a relaxing evening, my mind is buzzing with a blend of creative energy and culinary excitement. You see, sometimes inspiration strikes in the most unexpected moments. Just as I was unwinding with a bubble bath – a nightly ritual that often leads to quiet contemplation – I found myself browsing art blogs. Suddenly, a powerful urge to pick up my paintbrushes took hold. It’s funny how life works; those deep passions we hold, the ones that bring us immense joy, are often the first to be neglected amidst the daily hustle.
Painting, for me, is a profoundly enjoyable experience, yet carving out time for it often feels like a monumental task. The blank canvas can be intimidating, a symbol of potential yet also of perceived perfection. I’ve often started an underpainting, giving the canvas a base color, only to find myself tucking it away, anxious about the next stroke. Why do we do this? Why do we procrastinate on the very things that nourish our souls? I believe it’s often because inaction feels easier than action. It’s easier to lose ourselves in passive comfort than to summon the self-discipline required to engage our minds and hands in a creative pursuit. The unread books, the looming stack of dishes – these are all testaments to the gravitational pull of ease, though sometimes, it’s simply exhaustion disguised as laziness.
But there’s an undeniable satisfaction, isn’t there, in doing? In creating? Whether it’s painting a canvas, diving into a captivating novel, attending that yoga class you’ve been meaning to, or in my case tonight, transforming simple ingredients into a spectacular meal. The reward of completion, of having brought something beautiful or delicious into existence, far outweighs the initial hesitations. So, the candle from my bubble bath now illuminates my kitchen table, a beacon of intention. While the paintbrushes await their turn, there’s another creation I simply cannot wait to share with you, a dish that embodies the very essence of flavorful accomplishment: this incredible tandoori-marinated fried chicken. And yes, it absolutely had to be shared on a FRYday!

The Secret to Unforgettable Fried Chicken: The Tandoori Marinade
Let’s talk about fried chicken. Many perceive it as a daunting, time-consuming endeavor, a dish best left to professional chefs or fast-food joints. But I’m here to tell you a secret: homemade fried chicken, especially this Indian-inspired version, is surprisingly easy and quick to prepare, yielding incredibly juicy, bone-in meat in as little as 10-12 minutes of frying. Your friends and family will be utterly thrilled and thoroughly impressed, and they’ll never have to know just how straightforward it was to achieve such culinary brilliance.
The magic truly lies in the marinade. For this recipe, we’re harnessing the power of a vibrant Indian-spiced yogurt mixture. I’ve long envisioned the incredible depth of flavor that tandoori spices – a hallmark of Indian cuisine known for its smoky, aromatic, and tangy profiles – could bring to classic fried chicken. And let me tell you, the result exceeded all expectations. The yogurt acts as a natural tenderizer, breaking down the chicken fibers and allowing the robust spices to deeply penetrate the meat. This ensures every bite is bursting with flavor and boasts an unmatched tenderness, even before it hits the hot oil.
Imagine tender chicken pieces, steeped in a fragrant blend of garlic, lemon, paprika, cumin, coriander, cayenne, and cloves, all bound together by creamy yogurt. This isn’t just a marinade; it’s a flavor infusion that elevates the humble chicken to gourmet status. Marinating for at least a few hours, or ideally, for half a day, transforms the chicken into a flavor powerhouse. I served this with my Samosa Potatoes – another recent culinary experiment that proved to be a stroke of genius – and the pairing was absolutely divine. I can’t wait to share those with you too!
Mastering the Fry: Essential Tips for Crispy Perfection
While the marinade does most of the heavy lifting for flavor, there’s one crucial step to ensure your tandoori fried chicken achieves that coveted golden-brown crispiness without sacrificing the juiciness within: **do not forget to bring your chicken to room temperature before frying.** This means taking it out of the refrigerator at least 30 minutes, and ideally an hour, before you plan to fry. This simple step is a game-changer. If the chicken goes straight from cold to hot oil, the outside will cook and darken much faster than the inside, leading to a burnt exterior and a potentially undercooked interior. Allowing it to warm up slightly ensures a more even cooking process, resulting in perfectly golden, cooked-through chicken every single time.
Another key to success lies in maintaining the correct oil temperature. A consistent 350°F (175°C) is ideal for achieving that beautiful golden crust and thoroughly cooked interior. Don’t overcrowd your frying vessel; cook in batches to prevent the oil temperature from dropping too drastically. A wire rack placed over paper towels is your best friend for draining excess oil and maintaining crispiness after frying. These small details make all the difference, transforming a good meal into an exceptional one.
As a testament to its authenticity and deliciousness, my Indian husband absolutely adored this recipe. His approval is perhaps the highest compliment any Indian-inspired dish in our kitchen can receive, solidifying its place as a new family favorite!

Indian Fried Chicken (with Delicious Tandoori Marinade)
By: Jennifer Pallian BSc, RD
Crispy-crunchy Indian fried chicken with an tandoori-spiced yogurt marinade. Pretty darn irresistible.
Ingredients
For marinade:
- 1 ½ cups plain yogurt
- 4 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tsp kosher salt
- 1 tbsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp ground black pepper
- ½ tsp cayenne
- ⅛ tsp ground cloves
- 1 whole chicken cut into pieces (halve breasts for similar sizing) OR 2 lbs bone-in chicken pieces
For coating:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- Pinch of salt
Instructions
- In a shallow baking dish, stir together plain yogurt, minced garlic, lemon juice, kosher salt, paprika, ground cumin, ground coriander, ground black pepper, cayenne, and ground cloves. This creates your rich and aromatic tandoori marinade.
- Add the chicken pieces to the prepared marinade, ensuring each piece is thoroughly coated. Cover the dish and allow the chicken to marinate in the refrigerator for a minimum of 2 hours, and ideally up to 24 hours, for maximum flavor infusion and tenderness.
- Before you begin frying, remove the marinated chicken from the refrigerator and let it sit at room temperature for approximately 30 minutes. This crucial step promotes even cooking and prevents the exterior from burning before the interior is fully cooked through.
- While the chicken is coming to temperature, prepare the coating. In a large zippered freezer bag, combine the all-purpose flour, baking powder, and a pinch of salt. Seal the bag and shake vigorously to ensure the dry ingredients are thoroughly mixed.
- Heat your cooking oil in a deep fryer to a consistent 350ºF (175ºC). Alternatively, if using a large cast iron skillet, ensure the oil is about 3/4″ deep. Prepare a draining station by lining a baking sheet with paper towels and placing a wire cooling rack on top.
- Working with one or two pieces at a time to avoid overcrowding, remove the chicken from the marinade, allowing any excess to drip off. Place the chicken piece(s) into the freezer bag with the flour mixture, seal the bag, and shake well to evenly coat the chicken with the dry mixture.
- Carefully place the coated chicken into the hot oil. Fry in two batches to maintain optimal oil temperature and prevent overcrowding. Cook, flipping the pieces occasionally, until they are beautifully golden brown and reach an internal temperature of 165ºF (74ºC). This typically takes 8-12 minutes per batch, depending on the size of the chicken pieces.
- Once cooked, transfer the crispy fried chicken pieces to the wire cooling rack on the prepared baking sheet to drain any excess oil. Serve hot for the best flavor and texture. If not serving immediately, let them cool completely on the wire racks before refrigerating.
