Ingredients

  • 1 cup softened unsalted butter
  • 1 cup packed brown sugar
  • 1 cup molasses
  • 3 large eggs
  • 6 cups all purpose flour (lightly spooned and leveled)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • ½ tsp ground cloves

Instructions

  1. In a standing mixer, beat the softened butter and packed brown sugar on medium-high speed until the mixture is light and fluffy, which usually takes about two minutes. Be sure to stop occasionally and scrape down the sides and bottom of the mixer bowl to ensure even mixing. Next, beat in the molasses until well incorporated, followed by the eggs, one at a time, mixing until just combined after each addition.
  2. In a separate large bowl, thoroughly whisk together the all-purpose flour, baking powder, baking soda, kosher salt, ground ginger, ground cinnamon, and ground cloves. Ensure all dry ingredients are evenly distributed.
