  • cup fancy molasses (NOT blackstrap molasses!)
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 ½ tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp kosher salt
  • ½ pomegranate seeds only

For Icing

  • cup unsalted butter room temperature
  • 2 tbsp full-fat cream cheese
  • 2 tbsp whipping cream or milk
  • 1 ½ cups confectioners’ sugar
  • ½ tsp pure vanilla extract

Instructions

  1. Preheat oven to 350ºF (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a stand mixer with the paddle attachment (or using a hand mixer), beat the butter, granulated sugar, and fancy molasses on high speed until the mixture is light and fluffy, which usually takes about 3 minutes. Beat in the large egg, ensuring it’s fully incorporated, then stop and scrape down the sides of the bowl once with a rubber spatula to ensure everything is well combined.
  3. In a separate medium-sized bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, and kosher salt until evenly distributed.
