- 1/8 teaspoon black pepper
- 8 – 6 inch corn tortillas, (or flour)
- cilantro, for garnish
- 2 cups pineapple, diced
- 1/4 cup red onion, diced
- 1/2 red bell pepper, diced
- 2 roma tomatoes, diced
- 3 tablespoons cilantro, chopped
- 1 jalapeño, seeds removed, diced
- 1 lime, juiced
- 1 teaspoon chili powder, (optional)
- salt, to taste
Instructions

Heat the olive oil in a large skillet over medium heat.

Add the onion and sauté for 2 minutes until it starts to become fragrant. Add the garlic and sauté for 2 minutes. Add the ground pork and cook until there is no pink left and it is cooked through.
