The Story Behind My Obsession: The Easiest & Most Delicious Strawberry White Chocolate Mousse Tart
There are some recipes that just stick with you, becoming instant classics in your culinary repertoire. For me, this Strawberry White Chocolate Mousse Tart is unequivocally one of them. This summer alone, I’ve found myself whipping up this exquisite dessert no less than three times – a testament to its undeniable allure, especially considering my usual penchant for experimenting with new culinary creations. It’s truly a marvel of simplicity and flavor, making it my absolute go-to for potlucks, family dinners, or simply when I crave something exceptionally delicious with minimal fuss.
What makes this tart so special? It’s the harmonious marriage of textures and tastes. Imagine a velvety, airy white chocolate mousse, so light it practically floats, nestled within a perfectly buttery, slightly crunchy graham cracker crust. Crowned with a generous layer of vibrant, glistening fresh strawberries, it’s a feast for both the eyes and the palate. Every bite offers a balance of sweetness from the white chocolate, tartness from the berries, and a satisfying crunch from the crust. It’s the kind of dessert that elicits gasps of delight and leaves everyone asking for the recipe.

A Partnership in Sweetness: Celebrating Quality Berries
This remarkable tart owes much of its freshness to high-quality ingredients, particularly the strawberries. We’re proud to acknowledge the excellence of Driscoll’s berries. Their commitment to flavor and quality truly shines through in every bite of this dessert. Many years ago, I had the pleasure of learning about their family farming legacy and dedication to cultivating the sweetest berries, a story I shared in a previous post about Pistachio-Raspberry Cake. When choosing your strawberries for this tart, opting for berries known for their vibrant taste will elevate your dessert to new heights.
The Secret to an Ethereal White Chocolate Mousse: Just Two Ingredients!
The star of this tart is undoubtedly the incredibly simple, yet utterly decadent, white chocolate mousse. You won’t believe it only requires two ingredients: cooled, melted white chocolate and perfectly whipped cream. The magic lies in the method. The crucial step is allowing the melted white chocolate to cool completely to room temperature before gently folding it into the stiffly whipped cream. Rushing this process, or incorporating warm chocolate, will cause the delicate air bubbles in the whipped cream to deflate, resulting in a dense, rather than ethereal, mousse. This waiting period, while perhaps the most challenging part of the entire preparation, is absolutely essential for achieving that light, cloud-like texture that defines a truly exceptional mousse.
For those who love to visualize the process, here’s a helpful guide: Watch the Mousse in Action. Seeing how easily these two ingredients transform into a luxurious filling will inspire confidence in even the most hesitant bakers.
Crafting the Perfect Base: An Easy Graham Cracker Crust
Complementing the delicate mousse is a wonderfully simple graham cracker crust. It offers a delightful crunch and a buttery flavor that perfectly balances the sweetness of the white chocolate and the freshness of the strawberries. As you might notice in a video demonstration, sometimes the crust can be a touch crumbly – but don’t fret! These minor imperfections are easily remedied, and truthfully, a slightly rustic touch often adds to the charm of a homemade dessert. Plus, who can resist licking the spoon (or the tart pan) after pressing in that buttery goodness?
The crust provides a stable foundation that holds the airy mousse and a generous pile of berries without collapsing. Baking it briefly ensures a crisp texture that stands up beautifully to the creamy filling.
The Art of Assembly and Setting: Patience is a Virtue
Once the mousse is prepared and gently folded into its final, airy form, it’s scraped into the cooled graham cracker crust. The tart then needs to be left to set in the refrigerator for a few hours. This chilling time is vital. As the cocoa butter within the white chocolate solidifies, it meticulously traps all those delicate air bubbles, transforming the liquid mixture into a firm yet incredibly light mousse.
The resulting texture is simply divine: firm enough to support a lavish mound of fresh strawberries without them sinking into the depths, yet maintaining a melt-in-your-mouth quality that’s far lighter than a rich cheesecake and distinctly different from a foamy egg-white mousse. It strikes a perfect balance, making each spoonful a pure delight.
The Finishing Touch: Glistening Strawberries and a Hint of Sweetness
To complete this masterpiece, fresh strawberries are meticulously arranged over the set white chocolate mousse. To enhance their natural beauty and add an extra layer of sweetness, the berries are gently brushed with melted strawberry jam. This glaze not only provides a beautiful sheen, making the tart look even more appetizing, but also locks in the fresh flavor of the strawberries and adds a subtle, complementary fruity note. You can serve the tart immediately after glazing, or allow the jam to set slightly in the refrigerator for about 30 minutes, which creates a slightly firmer, candy-like coating on the berries.

For an elevated presentation, I often like to leave some of the strawberry stems intact, as their vibrant green color offers a lovely contrast against the red berries and white mousse. However, feel free to remove them entirely if you prefer a cleaner look. A few fresh mint leaves could also be scattered over the top for an additional pop of color and a refreshing aromatic touch.
Beyond the Tart: Versatile White Chocolate Mousse Creations
The beauty of this white chocolate mousse recipe extends far beyond this specific tart. It’s incredibly versatile and can be adapted to suit various preferences and occasions. For instance, if you’re catering to gluten-free friends or simply prefer individual portions, you can spoon the mousse directly into elegant individual cups or ramekins before refrigerating them to set. Top these delightful cups with fresh berries, or perhaps layer the mousse with a vibrant lemon curd for a delightful tangy contrast. Oh my goodness, the possibilities are endless!
Another fantastic idea is to use this light and creamy white chocolate mousse as a luxurious substitute for traditional whipped cream in classic strawberry shortcakes. Imagine the rich, smooth texture complementing the sweet biscuits and fresh berries – it’s a game-changer! Its stability makes it ideal for piping or layering, offering a more refined touch to simple desserts.

Recipe Details
- By: Jennifer Pallian BSc, RD
- Prep Time: 15 minutes
- Cook Time: 10 minutes
- Total Time: 3 hours (includes setting time)
- Servings: 8
Ingredients
For the Crust:
- 1 ¼ cups graham cracker crumbs
- 2 tbsp granulated sugar
- ¼ cup salted butter, melted
For the Mousse and Assembly:
- 1 ⅓ cups whipping cream, chilled
- 6 ½ oz good quality white chocolate, coarsely chopped
- 1 package (1 lb) Driscoll’s strawberries, halved (or large berries quartered)
- 2 tbsp strawberry jam
Instructions
- Prepare the Crust: Preheat your oven to 350ºF (175ºC). In a medium bowl, combine the graham cracker crumbs with granulated sugar. Pour in the melted butter and stir until the mixture is thoroughly combined and resembles wet sand. Press this mixture firmly and evenly into a 9-inch tart pan with a removable bottom. Bake for 10 minutes. Once baked, remove from the oven and allow the crust to cool completely on a wire rack before proceeding.
- Make the Mousse Filling: While the crust cools, begin preparing the white chocolate mousse. In a medium microwave-safe bowl, combine the coarsely chopped white chocolate with ⅓ cup of the chilled whipping cream. Microwave on 50% power for one minute, then stir well. Continue microwaving in 30-second intervals, stirring after each, until the chocolate is about 75% melted. Remove from the microwave and stir until the residual heat fully melts any remaining chocolate, resulting in a smooth mixture. It is crucial to let this chocolate mixture cool to room temperature on your counter. Do NOT refrigerate it, as this can cause it to cool unevenly and harden at the edges, making it difficult to incorporate later.
- Fold the Mousse: In a separate, chilled bowl, whip the remaining 1 cup of whipping cream with an electric mixer until stiff peaks form. Once your white chocolate mixture is at room temperature, gently fold about ⅓ of the whipped cream into it. Use a spatula to gently cut down through the center of the mixture and scoop back up and over, continuing until it is just incorporated. This step helps to lighten the chocolate mixture, preventing the main batch of whipped cream from deflating when added. Then, carefully fold in the remaining whipped cream until no streaks of white chocolate or cream are visible and the mousse is light and uniform.
- Assemble and Chill: Scrape the prepared mousse filling into the completely cooled tart crust and gently smooth the top with your spatula. Refrigerate the tart until the mousse is fully set, which will take approximately 2-3 hours.
- Add Strawberries and Glaze: Once the tart is set, arrange the fresh, halved (or quartered) strawberries decoratively over the top of the mousse. In a small saucepan or microwave-safe bowl, gently melt the strawberry jam until it’s smooth and fluid. Using a pastry brush, lightly brush the melted jam over the strawberries to give them a beautiful sheen and a touch of extra sweetness.
- Serve: The tart can be served immediately, or for a firmer jam glaze, return the tart to the refrigerator for about 30 minutes before serving. Enjoy your homemade Strawberry White Chocolate Mousse Tart!
