Apple Pie Cake

The best apple cake – a fluffy, tender cinnamon-spiced cake base topped with lots of juicy, brown-sugared apples. It’s like an apple pie and a cake had a delicious, delicious baby.

Ingredients
- ½ cup butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg, room temperature
- 1 tsp pure vanilla extract
- 9 oz/2 cups all purpose flour
- 1 tsp baking soda
- 1 tbsp cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ½ tsp kosher salt
- 1 cup buttermilk
- 3 medium apples, peeled, cored, and thinly sliced
Toppings
- 3 tbsp butter, softened
- ⅓ cup brown sugar
- ½ tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350ºF (175°C). Line an 8×8-inch (20×20 cm) square baking pan with parchment paper, allowing some overhang for easy removal, or grease it well with butter and dust lightly with flour.
- In the bowl of a stand mixer, combine the softened butter and both granulated and brown sugars. Beat on medium speed until the mixture is light, fluffy, and pale, which should take about 2 minutes. Remember to scrape down the sides of the bowl occasionally to ensure everything is well combined. Beat in the egg and vanilla extract until fully incorporated.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, ground ginger, ground nutmeg, and kosher salt until evenly combined. With the mixer speed on low, gradually incorporate about 1/3 of the flour mixture into the wet ingredients, followed by 1/2 of the buttermilk. Repeat this process, adding another 1/3 of the flour, then the remaining buttermilk, and finally, the last third of the flour. Mix just until the batter is combined and no dry streaks remain.
- Spread the batter evenly into the prepared baking pan. Arrange the thinly sliced apples over the entire surface of the batter. In a small bowl, combine the topping ingredients (3 tbsp softened butter, ⅓ cup brown sugar, ½ tsp cinnamon, and a pinch of salt) with a spoon, mixing until crumbly. Use your fingers to pinch off small pieces of this mixture and scatter them evenly over the apples.
- Bake for approximately 50 minutes, or until the apple topping is beautifully caramelized and the center of the cake feels slightly springy when gently pressed. A wooden skewer inserted into the center should come out clean. Allow the cake to cool in the pan on a wire rack before slicing and serving.
