Essential Ingredients for a Perfect Bowl

You’ll be delighted by how easy this recipe is to make, utilizing simple, wholesome ingredients that come together to create something truly extraordinary. It’s no wonder this is one of my all-time favorite recipes to prepare!

  • Aromatic Vegetables: The foundation of this flavorful lentil soup begins with sautéed onion and garlic, which build a crucial aromatic base. The star addition, fresh carrots, not only contribute a beautiful color and texture but also introduce a natural sweetness that beautifully balances the rich spices. For an extra layer of depth and nutrition, you could experiment with adding finely diced butternut squash or sweet potato; just ensure they are cut small enough to cook quickly and evenly with the other vegetables.
  • Signature Moroccan Spices: The magic of this soup truly lies in its captivating spice blend. My preferred combination includes earthy cumin, vibrant turmeric (known for its golden hue and anti-inflammatory properties), fragrant coriander, a touch of smoky paprika, and a hint of warm cinnamon. This carefully balanced mix creates the distinctive Moroccan flavor profile that makes this soup so unique and irresistible.
  • Hearty Red Lentils: Red lentils are the undisputed stars of this recipe. Their delicate texture means they break down beautifully during cooking, creating a wonderfully creamy consistency, even without adding dairy. Remember to thoroughly rinse your red lentils under cold water before cooking to remove any debris or stray stones, ensuring a clean and smooth soup.
  • Sweet Diced Tomatoes: A can of diced tomatoes provides a lovely acidity and subtle sweetness that brightens the entire soup. For an even deeper flavor, consider using crushed tomatoes, which offer a smoother texture, or fire-roasted tomatoes to infuse a delicious smoky dimension into your soup.
  • Flavorful Vegetable Broth: To keep this soup strictly vegan, vegetable broth is my go-to choice, lending a rich, savory base. However, if dietary restrictions are not a concern, feel free to substitute with chicken broth or chicken stock for an equally delicious result. The quality of your broth will significantly impact the overall flavor of your soup.

Cooking Tips and Flavorful Variations

Elevate your Moroccan Carrot Red Lentil Soup with these simple cooking tips and creative variations, ensuring every bowl is tailored to your taste and dietary preferences:

  • Boost the Protein Content: For an even more substantial meal, consider stirring in a can of rinsed and drained chickpeas or white beans (such as cannellini or navy beans) during the last 10-15 minutes of simmering. They’ll absorb the delicious flavors and add a wonderful textural contrast.
  • Explore More Vegetables: This soup is incredibly forgiving and welcomes additional vegetables. Try adding florets of cauliflower for a hearty touch, finely chopped jalapeños if you desire a spicy kick, or cubes of potatoes or sweet potatoes for extra creaminess and nutritional value. Ensure any additions are cut into small pieces to cook through evenly.
  • Garnishes for an Extra Touch: Garnishes are key to taking your soup from good to gourmet. A sprinkle of fresh cilantro or parsley adds vibrant color and freshness. For those not adhering to a vegan diet, crumbled feta cheese offers a salty, tangy counterpoint. A dollop of Greek or plain yogurt swirled in before serving can add a luxurious creaminess and a delightful tang.
  • For Meat Lovers: While this soup is beautifully delicious as a meatless dish, you can easily adapt it for meat enthusiasts. Brown some ground sausage, diced chicken, ground pork, or even crispy bacon bits, and stir them into the soup during the final simmering stage. The rich flavors of the meat will meld wonderfully with the Moroccan spices.
  • Lentil Choices and Texture Preferences: Red lentils are favored in this recipe because they naturally break down, contributing to the soup’s creamy texture. I often blend a portion or even half of the soup using an immersion blender to achieve a velvety smoothness while leaving some chunky bits for texture. However, if you prefer a less creamy, more textured soup, you can simply enjoy it as is without blending. If you happen to have brown or green lentils on hand, you can certainly use them as a substitute, or even a mix of red and brown/green. Keep in mind that brown and green lentils hold their shape better, resulting in a chunkier soup, which some people absolutely prefer. It’s entirely up to your textural preference!

Expert Tip for Freezing: To ensure the best quality, allow your Moroccan Carrot Red Lentil Soup to cool completely to room temperature before portioning it into airtight, freezer-safe containers. Store in the freezer for up to 3 months. When you’re ready to enjoy it, simply transfer the container to the refrigerator and let it thaw overnight. Reheat gently on the stove over low heat, stirring occasionally until thoroughly warmed through. This method preserves the soup’s rich flavor and delightful texture.

Storage and Meal Prep Made Easy

This Moroccan Carrot Red Lentil Soup is a fantastic candidate for meal prepping, allowing you to enjoy healthy, flavorful meals with minimal effort throughout the week or even months. Proper storage is key to maintaining its deliciousness:

  • Refrigeration: Leftover soup can be stored in an airtight container in the refrigerator for up to 7 days. It reheats beautifully on the stovetop over low heat or conveniently in the microwave.
  • Freezing for Long-Term: This soup truly shines as a freezer-friendly meal. Once the soup has completely cooled, transfer it into freezer-safe containers or heavy-duty freezer bags. Be sure to leave a little headspace if using containers, as liquids expand when frozen. It will keep well in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating. This makes it an invaluable option for quick, healthy lunches or dinners when you’re short on time.

Learn how to make this delicious soup by watching the instructional video below:

Ingredients

  • 2 tablespoons olive oil
  • 1/2 medium sweet onion, chopped
  • 3 garlic cloves, minced
  • 2 cups chopped carrots or about 4 medium carrots, peeled and chopped
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 2 teaspoon coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 2 cups red lentils, rinsed until water runs clear
  • 1-15 ounces can diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Sauté the chopped onion and minced garlic until they are soft and fragrant, which typically takes about 2 minutes. Then, add the cumin, turmeric, coriander, paprika, and cinnamon to the pot and continue to sauté for approximately 4 more minutes, allowing the spices to toast and release their aromas. Stir in the chopped carrots and continue to sauté until the carrots begin to tenderize, about 10 minutes.
  2. Pour in the vegetable broth, add the can of diced tomatoes (undrained), and the rinsed red lentils. Stir all the ingredients together to combine them well. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and let it cook for about 20 minutes, or until the lentils are tender and have broken down slightly.
  3. At this stage, you have a choice regarding the soup’s texture. You can enjoy the soup as is, with the delightful chunks of carrots, lentils, and tomatoes providing a rustic feel. Alternatively, for a creamier consistency, use a handheld immersion blender to blend the soup directly in the pot, or carefully transfer portions to a regular blender (and blend in batches, if necessary). I often prefer a balance, blending about half of the soup to create a creamy base while leaving the remaining half chunky for added texture.
  4. Serve the warm soup immediately. Garnish generously with fresh cilantro for a burst of freshness, a sprinkle of crushed red pepper flakes if you enjoy a little heat, and a squeeze of fresh lemon juice to brighten all the flavors. Enjoy!

Notes

  • This recipe yields approximately 6 cups of hearty soup.
  • This soup is exceptionally freezer-friendly, making it perfect for preparing in advance or storing leftovers.
  • For a non-vegan option, chicken broth can be used as a substitute for vegetable broth.
  • To achieve a thicker soup, stir in 2-3 tablespoons of tomato paste after the onions, garlic, and carrots have cooked, and sauté it for a minute before adding the broth and lentils.
  • Consider adding other nourishing ingredients such as quinoa or couscous for extra substance, chickpeas for added protein, or diced butternut squash or zucchini for more vegetable goodness.
