Ingredients

  • 2 Tablespoons olive oil
  • 1/2 sweet onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 garlic, minced
  • 1 lb. andouille sausage, chopped
  • 3 teaspoons Cajun seasoning
  • 1 teaspoon Old Bay
  • 1 can fire roasted diced tomatoes
  • 2 Tablespoons tomato paste
  • 3 cups chicken broth
  • 1/4 cup cream
  • 8 oz. penne pasta, or pasta of your choice
  • 1/4 cup parsley, freshly chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the onion, red bell pepper, yellow bell pepper, garlic, andouille sausage, 2 teaspoons Cajun seasoning, and 1 teaspoon Old Bay.
  2. Sauté for about 8 minutes, until the sausage is browned and the peppers and onion are soft.
  3. Add the remaining 1 teaspoon Cajun seasoning, fire-roasted tomatoes, tomato paste, chicken broth, 1/4 cup cream, and 8 oz. penne pasta. Bring the mixture to a boil.
  4. Cover the pot, turn down the heat to medium-low, and simmer for 13-15 minutes, or until the pasta is cooked al dente.
  5. Stir in the freshly chopped parsley and season with salt and pepper to taste.
