  • 1/2 of a small sweet onion, diced
  • 1/2 red bell pepper, seeds removed, diced
  • 1/2 orange bell pepper, seeds removed, diced
  • 1 stalk celery, chopped
  • 1-2 teaspoons Cajun seasoning, adjust to how spicy you like your dish
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 15 ounce can fire roasted diced tomatoes, (or use regular diced tomatoes), undrained
  • 1 cup long grain white rice, rinsed
  • 1 3/4 cups vegetable or chicken broth
  • 1 cup baby spinach
  • 3/4 cup heavy cream, (or you can use half and half or lactose-free milk)
  • 1/4 cup 2% milk, (or you can use lactose-free milk)
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • Fresh green onions, chopped, for garnish
