  • 2 cups bread cubes, toasted (from a crusty Italian baguette or ciabatta)
  • 1/2 English cucumber, cubed
  • 1 pint cherry tomatoes, sliced in half
  • 6 oz. fresh mozzarella cheese, drained and sliced (or small mozzarella balls, halved)
  • 20 fresh basil leaves, thinly sliced (chiffonade)
  • 4 Tablespoons extra virgin olive oil, divided
  • 1 tsp balsamic vinegar (good quality for best flavor)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 275 degrees F (135°C). Cut your chosen crusty bread into roughly 1-inch cubes. Spread these cubes evenly on a baking sheet in a single layer. Drizzle 1 Tablespoon of extra virgin olive oil over the bread cubes, tossing gently to ensure they are lightly coated. Bake for 15-20 minutes, or until the bread cubes are beautifully golden, crisp, and perfectly toasted. Remove from the oven and allow them to cool completely at room temperature.
  2. In a large, attractive salad bowl, combine the freshly cubed English cucumber, the vibrant sliced cherry tomatoes, the creamy, fresh mozzarella (sliced or halved), and the aromatic chiffonade of basil. These ingredients form the colorful and flavorful core of your Caprese Panzanella.
  3. Gently drizzle the remaining 3 Tablespoons of extra virgin olive oil and the 1 teaspoon of balsamic vinegar over the salad ingredients.
