Vietnamese Salad Rolls with Peanut Dipping Sauce

Ingredients

For the Salad Rolls:

  • 1 tbsp salt (for vermicelli water)
  • 4 cups boiling water (for vermicelli & rice paper)
  • 4 ounces dry vermicelli noodles (approx. 3 tied bundles)
  • 1 tbsp fish sauce (for seasoning noodles)
  • 1 tbsp lime juice (freshly squeezed, for seasoning noodles)
  • 1 large carrot, peeled and finely shredded or julienned
  • ½ large cucumber, seeded and finely shredded or julienned
  • 1 cup bean sprouts, rinsed
  • ¼ cup packed fresh cilantro and/or shredded mint leaves
  • 20 small rice paper circles (approx. 6-8 inches) or 10 large ones
  • Optional: Cooked shrimp, thinly sliced pork, chicken, or firm tofu (marinated and pan-fried)

For the Creamy Vietnamese Peanut Dipping Sauce:

  • ½ cup creamy peanut butter
  • 2 tbsp hoisin sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 clove garlic, minced
  • ½ tsp sriracha or chili garlic sauce (adjust to taste)
  • 2-4 tbsp hot water (to thin the sauce)
  • Garnish: Chopped peanuts, fresh cilantro

Instructions

  1. Prepare the Vermicelli Noodles: Into a deep baking dish or large bowl, pour 4 cups of boiling water and stir in 1 tablespoon of salt until dissolved. Carefully add the dry vermicelli noodles, ensuring they are fully submerged. Allow them to soak for approximately 2-3 minutes, or until they become tender but still retain a slight bite (al dente). Immediately remove the noodles from the hot water (reserving the water in the dish for later use with rice paper) and transfer them to a separate bowl. Drizzle with 1 tablespoon of fish sauce and 1 tablespoon of fresh lime juice, then toss gently to coat and prevent sticking. Set aside.
  2. Prepare Your Workspace and Fillings: Lightly dampen a clean kitchen dishtowel with warm water, wring it out well, and lay it flat on your work surface. This damp towel will prevent the rice paper from sticking as you roll. Arrange all your prepared fillings (cooked shrimp, shredded carrots, shredded cucumber, bean sprouts, seasoned vermicelli noodles, and fresh herbs) in an organized fashion around your workstation, making assembly quick and easy.
  3. Soften the Rice Paper: Take one sheet of rice paper wrapper. Dip it into the reserved hot water from the noodles for about 10-15 seconds. The rice paper should be pliable but still slightly firm; it will continue to soften as you work with it. Avoid over-soaking, as it will become too sticky and difficult to handle.
  4. Assemble the Salad Roll: Carefully lay the softened rice paper wrapper onto the damp towel. On the bottom third of the wrapper, arrange a small handful of seasoned vermicelli noodles, followed by a portion of shredded carrot, cucumber, and bean sprouts. If using shrimp or other protein, place 2-3 shrimp halves (or thin slices of other protein) in a row, slightly above the vegetable filling, leaving space at the top for the final roll. Add a few fresh cilantro and/or mint leaves.
  5. Roll the Salad Roll: Begin by folding the bottom edge of the rice paper wrapper up over the filling, tucking it in snugly. Next, fold in the sides of the wrapper towards the center, creating a neat envelope shape. Finally, tightly roll the entire bundle upwards from the bottom to the top. The goal is a firm, compact roll that holds its shape.
  6. Store Assembled Rolls: Transfer the finished salad roll to a plate. To prevent rolls from sticking to each other or drying out, cover them with a slightly damp paper towel while you continue to assemble the remaining rolls. Repeat steps 3-5 with the rest of the rice wrappers and fillings.
  7. Make the Creamy Peanut Sauce: In a microwave-safe bowl, warm the peanut butter for about 30 seconds to loosen its consistency. Stir in the hoisin sauce, fish sauce, rice vinegar, honey (or brown sugar), minced garlic, and sriracha (or chili garlic sauce). Mix thoroughly until all ingredients are well combined and smooth. Gradually add 2-4 tablespoons of hot water, stirring continuously, until you achieve your desired creamy dipping consistency. Taste and adjust seasonings if needed – add more spice for heat, more honey for sweetness, or a squeeze of lime for extra tang. Garnish with chopped peanuts and fresh cilantro if desired.
  8. Serve: Arrange the freshly made Vietnamese salad rolls on a platter with the creamy peanut dipping sauce on the side. Serve immediately and enjoy!

Tips for Perfect Homemade Salad Rolls
