  5. Put the roast in the oven and roast for 15 minutes, without opening the oven reduce heat to 325°F (163°C) and cook for about 50-60 minutes or until the roast reaches an internal temperature of 135°F (57°C) {medium rare} or 145°F (63°C) {medium doneness}.
  6. Remove from the oven, transfer the roast to a cutting board and cover the roast loosely with foil and let rest 15 minutes before carving thinly against the grain. Garnish with rosemary or parsley.
