Satisfying Savoury Cravings: My Go-To Swiss Chard Scramble for Expecting Moms
Pregnancy is a journey full of unexpected twists, especially when it comes to cravings. For me, a significant shift has been an almost exclusive desire for savoury foods, particularly in the mornings. The mere thought of anything sweet, sticky, cake-like, or drenched in maple syrup before noon is enough to trigger a severe aversion, sometimes even leading to actual nausea. I had optimistically hoped this morning woe would vanish after the first trimester, but as I approach my 19th week, this preference for the piquant over the saccharine remains as strong as ever.
This culinary compass pointing firmly towards savoury has sparked conversations with friends and family about the age-old wives’ tales. You know the ones: “If you crave savoury, it’s a boy; if you crave sweet, it’s a girl.” These charming anecdotes are often shared with a wink and a nod, adding an element of folklore to the modern marvel of pregnancy. While scientific evidence doesn’t support these gender predictions, they certainly add a fun, speculative dimension to the daily experience of expectant parents. Do you find yourself believing in any of these delightful pregnancy stories, or have your cravings defied such simple categorizations?

Embracing Greens: Why Swiss Chard Scramble Became My Daily Delight
Alongside my distinct aversion to sweets, another prominent craving has emerged: leafy greens. This intense desire for nutrient-rich foliage is precisely how this delicious Swiss Chard Scramble became a recurring star on my breakfast menu, often appearing several times a week. It’s not just a personal craving-buster; it’s also an ingenious way to incorporate vital greens into my little one’s diet. When preparing it for my son, I make sure to chop the Swiss chard incredibly fine. This meticulous chopping is crucial because larger pieces of leafy greens can be tricky for toddlers to manage and sometimes get stuck, making mealtime a smoother, more enjoyable experience for everyone.
The beauty of this scramble lies in its simplicity and the depth of flavour it achieves. The minced onions, when sautéed, contribute a foundational layer of savoury sweetness that perfectly complements the earthiness of the chard. For those who, like me, appreciate a little kick to start their day, a generous sprinkle of punchy red chile flakes adds an invigorating warmth that awakens the palate without overpowering the delicate flavours of the eggs and greens. This combination creates a harmonious breakfast that feels both comforting and exciting.
The Secret to Perfect Scrambled Eggs: A Julia Child-Inspired Method
My approach to scrambled eggs might diverge from the conventional methods you’ve encountered. Many recipes suggest whisking milk or cream directly into the raw eggs at the beginning. However, I’ve adopted a technique that involves reserving any liquid — a mere splash of milk — until the very end of the cooking process. This method, which I vaguely recall learning from the legendary Julia Child herself many years ago, yields remarkably superior results.
Here’s why this technique is a game-changer: when milk is added to nearly-cooked eggs, it doesn’t just add moisture; it imparts a beautiful sheen to the scramble, making it look as good as it tastes. Crucially, it allows the eggs to hold their shape more effectively, preventing them from breaking down into minuscule curds. I much prefer larger, more substantial pieces of scrambled egg – they offer a more satisfying texture and mouthfeel. The final splash of milk emulsifies with the eggs, creating a rich, creamy finish while maintaining the integrity of the egg curds. This simple adjustment transforms ordinary scrambled eggs into a gourmet breakfast experience, demonstrating how small tweaks can have a profound impact on culinary outcomes.
Since this sweet-aversion took hold, eggs have become a cornerstone of our breakfast routine, thanks to their versatility, protein content, and ease of preparation. While this Swiss Chard Scramble has been a lifesaver, my culinary curiosity is already leading me to new horizons. Next week, I’m contemplating diving into some authentic South Indian savoury breakfasts, such as aromatic sambhar and fluffy idli. These dishes are incredibly delicious and packed with flavour, though they might be perceived as a bit ambitious for the average North American home cook, often requiring specialized spice mixes and cooking tools. However, I believe that exploring global cuisines can greatly enrich our palates and cooking skills. Would you be interested in seeing me venture into these more intricate, yet immensely rewarding, culinary territories?

10 minutes
Ingredients
- 2 tbsp olive oil
- 1 large leaf swiss chard finely chopped, stem removed and discarded
- 2 tbsp minced onion
- 5 large eggs
- ½ tsp kosher salt
- red chile flakes to taste (optional)
- splash of milk
Instructions
-
Heat olive oil in a well-seasoned cast iron or nonstick skillet over medium-high heat. Add the finely chopped Swiss chard and minced onion, and cook until they are just softened, which typically takes about 2 minutes.
-
Meanwhile, in a separate bowl, whisk the five large eggs vigorously until well combined. Stir in the kosher salt and red chile flakes, if you are using them for an extra kick.
-
Pour the whisked egg mixture into the pan with the cooked greens and onions. Stir gently to ensure the greens and onions are evenly incorporated throughout the eggs. Continue to cook, stirring occasionally, allowing large, fluffy curds to form.
-
Once the eggs are approximately 80% cooked (they should still look slightly wet in places), turn off the heat. Add a splash of milk and stir it through the eggs to coat them. This final touch adds moisture and a beautiful sheen, ensuring your scrambled eggs are perfectly creamy and hold their delightful texture. Serve immediately and enjoy!
