  • 1 large avocado, seed removed, diced
  • 4 green onions, green parts thinly sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 Tablespoon fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes, {optional, for added spice; use cayenne pepper for more heat}
  • 2 Tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Begin by husking the fresh ears of corn, removing all silk threads.
  2. Fill a large pot with water, about three-quarters full, and add a generous dash of salt. Bring the water to a rolling boil over medium-high heat. Once boiling, reduce the heat to medium and carefully add the husked ears of corn.
  3. Cook the corn for exactly 4 minutes. This brief blanching will ensure the corn remains crisp and sweet. Drain the hot water and immediately transfer the ears of corn to a bowl of ice water or run them under cold water to halt the cooking process. Set aside to cool completely.
  4. While the corn cools, prepare the rest of your salad ingredients. In a large mixing bowl, combine the drained and rinsed black beans, finely chopped red onion, diced green bell pepper, and thinly sliced green onions.
