The Ultimate Sweet-Tart Strawberry Buttermilk Pie: A Taste of Summer

There’s something wonderfully chaotic and exhilarating about planning a big adventure. I recently finalized a trip to Hawaii with a couple of friends, and between us, we’re bringing seven children, all under the age of five! Seven little explorers, all under five years old. Just thinking about the logistics is enough to make any parent chuckle nervously. Will they take care of each other? Can a four-year-old effectively babysit a toddler? We’re about to find out! While the prospect of tropical sun and sand is incredibly exciting, it also makes me crave comforting, delicious treats that can ground us amidst the joyful pandemonium. And what better way to find that balance than with a slice of homemade pie?

Speaking of delicious treats, let’s dive into the star of today’s show: Strawberry Buttermilk Pie. This isn’t just any pie; it’s a sublime creation featuring a sweet-tart, creamy custard baked with luscious strawberries, all nestled within a perfectly buttery, flaky crust. Imagine serving it piled high with even more fresh, ripe strawberries and a generous dollop of freshly whipped cream. It’s a dessert that encapsulates the very essence of summer, offering a delightful burst of flavor that’s both refreshing and deeply satisfying.

Embracing the Season: From Farmer’s Market Finds to Your Kitchen

This past winter felt exceptionally long and harsh, delaying the bounty of our local growing season. I’ve been practically haunting the farmer’s market, eagerly pacing around tables usually laden with vibrant produce. My eyes have been fixed on the empty spots where the peach vendors will soon set up shop, and I’ve been giving expectant stares to the still-sprouting tomato plants. The anticipation for fresh, local fruits and vegetables has been palpable.

Just recently, my favorite tree-fruit farmer whispered an insider tip: sour cherries are expected to arrive this very weekend! Let me tell you, I literally rearranged my travel plans just to be here to welcome them – or, more accurately, to hoard them for my summer baking projects. The joy of the first seasonal harvest is unmatched, and it inspires an immediate desire to get into the kitchen and create something truly special.

And then, the strawberries finally made their grand appearance! I’ve been buying them in what can only be described as a “berry-pocalypse” frenzy. My fridge is overflowing, and you can definitely expect a delightful, perhaps unreasonable, number of strawberry-centric recipes to emerge from my kitchen in the coming weeks. When these juicy, ruby-red gems are at their peak, there’s simply no holding back. Their vibrant flavor and natural sweetness are an open invitation to bake, cook, and create.

The Magic of Buttermilk and Strawberries: A Perfect Pairing

In this incredible pie, the star ingredient, fresh strawberries, are baked into a velvety, creamy custard. Buttermilk is the secret ingredient that elevates this pie to another level. Its delightful tang perfectly complements the inherent sweet-tartness of the strawberries, creating a harmonious flavor profile that is both bright and comforting. The acidity in the buttermilk also contributes to the custard’s smooth, luscious texture, ensuring every bite is pure bliss. It’s a classic combination often seen in various baked goods, and for good reason—it simply works wonders.

Crafting the Perfect Pie: A Guide to Flaky Crust and Velvety Filling

Master Your Pie Crust: Flaky Perfection Every Time

The foundation of any great pie is its crust, and this recipe delivers a truly exceptional one. The pastry recipe I’m sharing yields enough dough for two pie crusts, even though this particular pie only requires one. Why this generous quantity? Because we are truly on the cusp of fruit abundance! Imagine having an extra, ready-to-use pie crust patiently waiting in your freezer for when the next wave of seasonal berries or other fruits appears. It’s a gift to your future self, promising less prep work and more spontaneous baking. I rarely make pastry without preparing at least a double, if not a quadruple, batch. After doubling this recipe, I’m left with three perfectly portioned, ready-to-roll dough discs tucked away in my freezer. They are absolutely perfect for impromptu free-form tarts, quick quiches, or even easy savory dinners for unexpected guests. Having this essential component prepped and ready makes baking so much more enjoyable and less daunting.

The key to a flaky, tender pie crust lies in using very cold butter and not overworking the dough. When butter melts slowly in the oven, it creates pockets of steam that result in those desirable flaky layers. Chilling the dough thoroughly before rolling it out is another critical step, ensuring it remains easy to handle and prevents shrinkage during baking. Don’t be intimidated by homemade pie crust; with a food processor, it comes together quickly and effortlessly, transforming simple ingredients into a golden, delicious base for your filling.

A quick tip: If you find yourself short on buttermilk, there’s no need to worry! You can easily create a substitute with ingredients you likely already have in your pantry. For simple and effective ways to make quick and easy buttermilk substitutes, check out our guide.

Strawberry Buttermilk Pie with a perfect golden crust

Strawberry Buttermilk Pie

By: Jennifer Pallian BSc, RD

Strawberries baked into a sweet-tart creamy custard in a buttery crust. Serve it piled high with more fresh strawberries and a dollop of whipped cream.

Prep Time: 30 minutes

Cook Time: 45 minutes

Total Time: 1 hour 15 minutes

Servings: 6

Ingredients

For 2 Pie Crusts

  • 11.25 oz (2 1/2 cups) all-purpose flour
  • 1 tsp kosher salt
  • 10 oz cold unsalted butter, cubed
  • 6 tbsp ice water

For Filling

  • ½ cup melted butter
  • 1 cup granulated sugar
  • ¾ cup buttermilk
  • 2 tbsp flour
  • 2 large eggs + 2 yolks
  • 1 ½ tsp vanilla extract
  • ¼ tsp kosher salt
  • 1 lb strawberries, hulled and halved

Instructions

  1. Prepare the Pie Crust: In a food processor, combine flour and salt. Pulse a few times to mix. Scatter the cold, cubed butter over the flour mixture and pulse until the mixture resembles coarse crumbs, with some pea-sized butter pieces remaining. Drizzle in the ice water gradually, pulsing a few times just until loosely incorporated. Be careful not to overmix. Dump the dough onto a large sheet of parchment paper and use your hands to gently press it together into a cohesive mass. Divide the dough into two equal pieces and form each into a disc, approximately 5 inches wide. Wrap each disc tightly in parchment paper. Refrigerate one disc for at least 1 hour (or up to 2 days) and place the other in a freezer bag for future use. You’ll thank yourself for having an extra crust ready to go!
  2. Roll and Chill the Crust: On a lightly floured surface or between two sheets of parchment paper, roll out one disc of dough into a 12-inch circle. Carefully drape the rolled dough into a 9-inch pie plate, gently pressing it down to fit the bottom and sides without stretching. Trim the edges and crimp as desired. Freeze the pie crust in the pie plate for 10 minutes to help prevent shrinking. While the crust chills, preheat your oven to 375ºF (190ºC). If you have a baking stone or sheet, place it on the lowest rack to preheat as well.
  3. Prepare the Buttermilk Filling: In a small saucepan, melt the butter over medium heat. Remove the saucepan from the burner, stir in the granulated sugar, and set aside to cool slightly. Meanwhile, in a large mixing bowl, whisk together the buttermilk and 2 tablespoons of flour until the flour is fully dissolved and there are no lumps. Add the large eggs, egg yolks, vanilla extract, and ¼ teaspoon of kosher salt to the buttermilk mixture and whisk until well combined. Finally, whisk in the cooled butter and sugar mixture until smooth.
  4. Assemble and Bake the Pie: Arrange half of the hulled and halved strawberries evenly over the bottom of the chilled pie crust. Carefully pour the buttermilk custard filling over the strawberries. Place the pie plate on the preheated baking stone or sheet in the oven. Bake for approximately 45-50 minutes, or until the top is golden brown and the center of the pie has just a slight jiggle when gently nudged (it will continue to set as it cools). If you notice the crust edges or the top of the pie browning too quickly before the filling is set, loosely tent the pie with aluminum foil.
  5. Cool and Serve: Once baked, carefully remove the pie from the oven and transfer it to a wire rack to cool completely to room temperature. This step is crucial for the custard to fully set. Serve your delicious Strawberry Buttermilk Pie topped with the remaining fresh strawberries and a generous dollop of freshly whipped cream. Any leftover pie can be refrigerated for up to 2 days, though it’s unlikely to last that long!

Tips for Baking Success and Serving Suggestions

To ensure your pie turns out perfectly, remember to use cold ingredients for the crust and avoid overmixing. For the filling, whisking the flour into the buttermilk first helps prevent lumps and ensures a smooth custard. When it comes to strawberries, opt for ripe, fragrant berries for the best flavor. If your berries are very tart, you might add an extra tablespoon of sugar to the filling, though the buttermilk already provides a wonderful balance.

While fresh whipped cream and extra strawberries are classic garnishes, consider a dusting of powdered sugar for an elegant touch, or a light drizzle of balsamic glaze to intensify the berry flavor. A scoop of vanilla bean ice cream also makes a fantastic pairing, adding a creamy contrast to the pie’s sweet-tart profile. This pie is also excellent served with a cup of hot coffee or iced tea, making it a versatile dessert for any occasion, from casual family dinners to more festive gatherings.

Beyond the Recipe: Customizing Your Buttermilk Pie

This Strawberry Buttermilk Pie recipe is wonderfully adaptable. While strawberries are undeniably perfect, don’t hesitate to experiment with other fruits. A blend of mixed berries like raspberries, blueberries, and blackberries would be equally delicious, offering a complex berry medley. Peach slices, especially when ripe and juicy, could also be a fantastic addition, creating a peachy buttermilk pie that screams summer. In the fall, consider using thinly sliced apples or pears, perhaps with a hint of cinnamon or nutmeg, for a cozy, seasonal variation. The core buttermilk custard base is versatile enough to complement a wide range of fruit flavors, allowing you to enjoy this delightful pie throughout the year with whatever produce is in season.

Whether you’re embarking on a wild family adventure or simply enjoying a quiet moment at home, this Strawberry Buttermilk Pie offers a slice of pure joy.
