Ingredients

  • 1 1/4 lb Just BARE Organic Boneless Skinless Chicken Thighs
  • 1/2 sweet onion, chopped
  • 3/4 cup honey
  • 1/4 cup soy sauce (low sodium if possible)
  • 1 teaspoon toasted sesame oil
  • 2 Tablespoons tomato paste
  • 2 garlic cloves, chopped
  • 1 to 2 teaspoons red chili paste (optional for spice)
  • 1/2 cup chicken broth
  • 1/4 teaspoon salt
  • black pepper, to taste
  • 2 teaspoons cornstarch
  • 4 Tablespoons water

Instructions

  1. Arrange the chicken thighs in the bottom of the slow cooker and pour the chopped onion over top.
  2. In a large mixing bowl, combine the honey, soy sauce, toasted sesame oil, tomato paste, garlic cloves, red chili paste (optional), chicken broth, salt, and pepper. Mix well to combine.
  3. Pour the sauce over the chicken and onions, ensuring everything is thoroughly coated.
  4. Cook on low for 4-1/2 hours. Then, use two forks to shred the chicken. Once shredded, return it to the slow cooker and mix to coat completely with the sauce. In a small bowl, combine the cornstarch and water until fully dissolved. Add this mixture to the slow cooker and stir to combine everything. Cover and continue cooking for an additional 30 minutes to thicken the sauce.
  5. When the chicken is done cooking, remove it from the slow cooker and sprinkle with sesame seeds for garnish.
