What Are Carnitas? Understanding This Mexican Delicacy
You might be wondering, what exactly are carnitas? Carnitas, which translates to “little meats” in Spanish, is a beloved dish in Mexican cuisine that originated in the state of Michoacán. Traditionally, carnitas are made by simmering or braising pork (typically pork shoulder or pork butt) in its own fat, or sometimes lard, for several hours until it becomes incredibly tender. After braising, the heat is often increased to crisp up the edges of the pork, resulting in a delightful contrast of textures: succulent, melt-in-your-mouth interior with perfectly browned, slightly crispy exteriors. This slow-cooking process allows the pork to develop deep, rich flavors that are truly irresistible.
While traditional carnitas require a lengthy braise, today’s recipe streamlines the process using the modern convenience of an Instant Pot, or pressure cooker. This innovative method drastically cuts down on cooking time while still achieving that signature tender, juicy texture. Our recipe deviates slightly from the traditional by cooking the pork in a flavorful liquid that includes the acidity of lime juice and, in a unique twist, beer. While beer isn’t typically found in classic carnitas, it introduces a wonderful depth of flavor and helps to further tenderize the meat, making this a truly exceptional and easy Instant Pot Carnitas recipe. You’ll be amazed at the depth of flavor this simple addition brings to the dish.

Key Ingredients for Flavorful Instant Pot Carnitas
Crafting the perfect Instant Pot Carnitas begins with a selection of fresh, high-quality ingredients and a thoughtful blend of spices. Below, you’ll find the essential components that bring this Mexican favorite to life. For precise measurements and step-by-step instructions, please refer to the complete recipe card at the end of this article.

- Pork Chops: This carnitas recipe shines with bone-in pork chops, which contribute to a richer flavor and wonderfully tender shredded pork. The bone helps to keep the meat moist during the pressure cooking process. However, if boneless pork chops are what you have on hand, they will work just as well – simply adjust the cooking time slightly if they are thinner. For a more traditional cut, pork shoulder (also known as pork butt) is an excellent choice for its ideal fat content and robust flavor, yielding incredibly succulent carnitas.
- Aromatic Spices: The warm and robust spice rub is truly the heart of these carnitas, infusing the pork with an irresistible depth. Our carefully balanced mixture features savory ground cumin for an earthy undertone, bold chili powder for a mild kick and vibrant color, pungent garlic powder and onion powder for foundational savoriness, and a touch of sweet paprika for warmth and color. A hint of brown sugar balances the savory notes and aids in caramelization during the searing process. Don’t forget a good amount of salt to enhance all the flavors.
- Beer: This recipe cleverly utilizes beer to achieve incredibly tender pork and add a unique layer of flavor. I recommend a mild lager or pilsner, such as Modelo or Corona, as their subtle maltiness complements the pork without overpowering it. The enzymes in the beer also contribute to the meat’s tenderness. If you prefer not to use alcohol, you can easily substitute the beer with chicken broth, vegetable broth, or even water for a still delicious result.
- Lime Juice: Freshly squeezed lime juice is a crucial ingredient that not only brightens the flavors but also acts as a natural tenderizer for the meat. Its acidity helps to break down the pork fibers during cooking. If limes aren’t available, lemon juice or orange juice can be used as a substitute, each offering a slightly different citrus note.
- Olive Oil: Essential for searing the pork chops before pressure cooking. Searing creates a flavorful crust through the Maillard reaction, locking in juices and adding depth.

How to Make Easy and Crispy Instant Pot Pork Carnitas
Creating succulent pork carnitas in your Instant Pot is a straightforward process that yields impressive results. Follow these simple steps to achieve tender, flavorful shredded pork with crispy edges, perfect for your next Mexican feast.
- Step 1: Prepare the Flavorful Spice Rub. In a small bowl, thoroughly combine all of your spice rub ingredients: brown sugar, ground cumin, chili powder, garlic powder, onion powder, paprika, and salt. Whisk them together until they form a uniform blend. Generously sprinkle this aromatic spice mix evenly over both sides of the pork chops. Using your hands, gently rub the spices into the meat, ensuring every surface is well-coated. This crucial step infuses the pork with deep flavor from the very beginning.
- Step 2: Sear the Pork for Enhanced Flavor. Set your Instant Pot to the “Sauté” function on “Normal” heat. Add the olive oil to the inner pot and allow it to heat for about a minute. Once the oil is hot and shimmering (but not smoking), carefully add the seasoned pork chops. Cook each side for approximately 2 minutes, aiming for a beautiful golden-brown sear. This searing step is vital for developing rich flavor through the Maillard reaction, creating a delicious crust that will deepen the overall taste of your carnitas. Ensure the pork chops are in a single layer to get a proper sear; you may need to work in batches depending on the size of your Instant Pot.
- Step 3: Pressure Cook for Ultimate Tenderness. Once the pork chops are beautifully seared, carefully pour in the beer (or broth, if substituting) and the fresh lime juice. The liquid should cover at least part of the pork. Deglaze the bottom of the pot by scraping up any browned bits with a wooden spoon – this adds immense flavor and prevents a “burn” notice. Secure the Instant Pot lid, making sure the sealing valve is set to the “Sealing” position. Select the “Pressure Cook” or “Manual” function and set the timer to 45 minutes for bone-in chops (or 35-40 minutes for boneless, depending on thickness). The Instant Pot will take about 5-10 minutes to come to pressure before the countdown begins.
- Step 4: Natural Release and Shredding. Once the cooking cycle is complete, allow the Instant Pot to perform a natural pressure release for at least 10 minutes. This helps to keep the pork exceptionally tender and moist. After 10 minutes, carefully switch the pressure release valve to “Venting” to release any remaining pressure, then cautiously remove the lid. Transfer the tender pork chops to a sturdy cutting board. Using two forks, easily shred the meat, discarding any bones or excess fat.
- Step 5: Crisp the Carnitas for Authentic Texture. Return the shredded pork meat back to the Instant Pot, along with some of the remaining cooking liquid (about 1/2 to 1 cup, depending on how juicy you like it). Switch the Instant Pot back to the “Sauté” function on “Normal” heat. Cook the pork, stirring occasionally, for another 3-5 minutes, or until most of the liquid has evaporated and the edges of the shredded pork begin to caramelize and turn slightly crispy. This final step is crucial for achieving the characteristic crispy bits that make carnitas so uniquely delicious.
- Step 6: Serve and Garnish. Remove the crispy, tender carnitas from the Instant Pot. Serve them immediately with warm tortillas and all your favorite garnishes. Think fresh cilantro, diced onions, a squeeze of extra lime juice, crumbled cotija cheese, a dollop of sour cream, or sliced avocado. Enjoy your homemade Instant Pot Carnitas!

Creative Ways to Enjoy Leftover Instant Pot Carnitas
One of the best things about making Instant Pot Carnitas is their incredible versatility. If you happen to have any leftovers (which is a big “if”!), they can be transformed into an array of delicious and exciting meals. Here are some fantastic ideas to make the most of your flavorful shredded pork:
- Classic Tacos: The most obvious and always satisfying choice! Serve your shredded pork carnitas in warm corn tortillas, soft flour tortillas, or crispy hard shell tacos. For a lighter option, try lettuce wraps. Top with fresh salsa, chopped onions, cilantro, a squeeze of lime, and a drizzle of crema.
- Cheesy Quesadillas: A guaranteed family favorite. Layer the carnitas with plenty of Monterey Jack or cheddar cheese between two tortillas and grill until golden and gooey. Serve with guacamole and sour cream.
- Hearty Rice Bowls (Burrito Bowls): Build your own customized burrito bowl. Start with a base of fluffy brown rice or authentic Mexican rice. Add a generous portion of carnitas, then pile on your favorite toppings like black beans, corn salsa, pico de gallo, pickled jalapeños, creamy guacamole, and a sprinkle of cotija cheese.
- Packed Burritos: Wrap your carnitas tightly in large flour tortillas with rice, beans, cheese, and salsa for a portable and satisfying meal. You can even pan-fry them for a crispy exterior.
- Loaded Nachos: Elevate your nacho game! Spread tortilla chips on a baking sheet, top with carnitas, shredded cheese, and black beans. Bake until cheese is melted and bubbly, then add fresh toppings like diced tomatoes, onions, jalapeños, and sour cream. Check out these Beef Nachos for inspiration on topping combinations.
- Enchiladas: Roll the carnitas into corn tortillas, smother with your favorite enchilada sauce and cheese, then bake until bubbly and golden.
- Carnitas Pizza: Use shredded pork as a unique and flavorful topping for homemade pizza, perhaps with a base of salsa verde or a spicy BBQ sauce.
- Sandwiches or Sliders: Serve warm carnitas on toasted buns with a dollop of coleslaw or pickled onions for a delicious sandwich.
- Huevos Rancheros or Breakfast Burritos: Add carnitas to your morning eggs for a Mexican-inspired breakfast. Perfect with a side of refried beans.

Storage and Reheating Tips for Instant Pot Carnitas
Proper storage ensures your Instant Pot Carnitas remain delicious and safe to enjoy for future meals. This recipe is fantastic for meal prep, allowing you to enjoy flavorful shredded pork throughout the week or save it for a quick, homemade dinner later.
Refrigeration:
Store any leftover cooked and cooled carnitas in an airtight container in the refrigerator for up to 4 days. It’s best to store them with a little bit of their cooking liquid to prevent them from drying out.
Freezing:
Carnitas freeze exceptionally well, making them ideal for future busy nights. Once the pork has completely cooled, transfer it to freezer-safe bags or airtight containers. For best results, include a small amount of the cooking liquid with the pork to maintain moisture and flavor during freezing. Label with the date and freeze for up to 3 months. To reheat, thaw overnight in the refrigerator, then warm in a skillet or microwave.
Reheating:
- Skillet Method: For the best texture, reheat carnitas in a lightly oiled skillet over medium heat, stirring occasionally, until heated through and slightly crispy.
- Microwave Method: For a quick reheat, place carnitas in a microwave-safe dish with a splash of water or broth, cover, and microwave in 30-second intervals until hot. This method might not yield crispy edges but is perfect for speed.
- Oven Method: Spread carnitas on a baking sheet and reheat in a preheated oven at 350°F (175°C) for 10-15 minutes, or until warmed through and the edges are crispy.
Instant Pot Carnitas Recipe FAQ
Here are some frequently asked questions to help you master this Instant Pot Carnitas recipe and troubleshoot any common issues:
Absolutely! To add a kick, incorporate finely diced jalapeños or serrano peppers into the pot during the searing stage. For a smokier heat, add a teaspoon or two of chipotle powder to your spice rub, or stir in a spoonful of adobo sauce from a can of chipotle peppers during the shredding and crisping phase. You can also simply increase the amount of chili powder in the spice rub.
While technically you don’t *have* to sear the pork, it is highly recommended. Searing the meat prior to pressure cooking is a crucial step that builds incredible depth of flavor and creates a delicious browned crust on the pork through the Maillard reaction. If you skip this step, your carnitas will still be tender, but they will lack that rich, complex flavor profile. You can still get crispy carnitas by broiling them after cooking, but the initial sear contributes a different kind of flavor development.
Achieving those desirable crispy edges is key to authentic carnitas! The primary method in this recipe is the final “Sauté” step in the Instant Pot after shredding. By cooking the shredded pork in some of the remaining liquid until it evaporates and the edges brown, you’ll get wonderful crispy bits. For even crispier results, or if you prefer to use your oven, you can spread the shredded pork (with a little cooking liquid) onto a baking sheet and broil for 5-10 minutes, flipping once, until nicely browned and crispy. Keep a close eye on it to prevent burning!
Yes, while pork chops work wonderfully, traditional carnitas are often made with pork shoulder (also known as pork butt or Boston butt) due to its ideal fat content, which yields incredibly tender and flavorful results. If using pork shoulder, you may need to adjust the cooking time slightly, typically increasing it to 60-70 minutes under pressure, followed by a natural release.
A “burn” notice usually means there’s something stuck to the bottom of the pot. Ensure you thoroughly deglaze the pot after searing by scraping up all the browned bits before adding the liquid and sealing the lid. If you get a burn notice, release pressure, open the pot, remove the meat, scrape the bottom, add more liquid if needed, and restart. Adding sufficient liquid and ensuring no food bits are stuck are key preventative measures.

Instant Pot Carnitas Recipe
Julia Jolliff
Ingredients
- 1 tablespoon brown sugar, light or dark
- 1 1/2 teaspoons ground cumin
- 2 1/2 teaspoons ground chili powder
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons paprika
- 1 teaspoon salt
- 2 bone-in pork chops (or boneless pork shoulder/butt)
- 1 tablespoon olive oil
- 1 cup beer— preferably Modelo or Corona, (or you can substitute chicken broth for the beer)
- Juice of 1 lime
- 4-6 small tortillas, flour or corn, for serving
- 1 cup crumbled cheese like cotija, queso fresco, or monetary jack, for garnish
- 1/4 cup sour cream, for garnish
- 1 avocado, sliced, for garnish
- Cilantro or Parsley leaves, for garnish
Instructions
- In a small bowl, combine all of the spice rub ingredients (brown sugar, cumin, chili powder, garlic powder, onion powder, paprika, and salt).
- Sprinkle the spice mix evenly over both sides of the pork chops and rub them to make sure all of the spice rub sticks.
- Heat your Instant Pot on the Sauté-Normal function. Add the olive oil and let it heat for another minute.
- When the oil is hot (but not yet smoking) add the pork chops and cook for 2 minutes. Turn the pork chops to the other side and cook for an additional 2 minutes. NOTE: Make sure the pork chops are in a single layer. You want to develop a good sear on each side— this will help add tons of flavor to the final dish!
- Once the pork chops are seared, add the beer and lime juice. Secure lid and set to pressure cook for 45 minutes (for bone-in chops). Natural release for at least 10 minutes before releasing the remaining pressure and carefully remove the lid. NOTE: The Instant Pot will take about 5-10 minutes to come to pressure and then will begin counting down from the set time.
- Remove the pork chops to a cutting board and shred the meat using two forks— discard the bones. Add the shredded meat back to the pot along with about 1/2 to 1 cup of the cooking liquid, and switch the Instant Pot to the Sauté-Normal function again.
- Cook the pork, stirring occasionally, for another 3-5 minutes, or until the liquid has almost completely evaporated and the edges of the pork are slightly crispy and browned.
- Remove the meat from the Instant Pot and serve with your favorite tortillas and garnishes.
- Store any leftover carnitas in an airtight container in the fridge for up to 4 days. Reheat for 2 minutes in the microwave or 10 minutes at 400°F (200°C) in the oven or in a skillet for crispier results.
Notes
- This recipe serves 2 adults as an entree or 4 if serving with several sides. It can easily be halved or doubled.
- If doubling the recipe, make sure to sear the pork chops in two batches to ensure each piece has enough space to develop a good crust. In addition, you will need approximately 1.5 cups of beer or broth. For doubling, you might need to increase pressure cooking time slightly to 55-60 minutes, followed by natural release.
- You can always substitute 4 tablespoons of your favorite taco seasoning for the homemade spice rub.
- As an alternative to beer, chicken stock or vegetable broth can be used for the cooking liquid.
- For extra crispy carnitas, after the Instant Pot sauté step, you can transfer the shredded pork to a baking sheet and broil for 5-7 minutes, watching carefully to prevent burning.
