Wholesome Seed & Currant Cookies

These delightful “healthy-ish” cookies are packed with hearty oats, four kinds of nutritious seeds, sweet currants, and crunchy cocoa nibs. A touch of delicious chocolate makes them an irresistible and guilt-free indulgence.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup all-purpose flour
  • cup oat flour (see note above for making your own or substitute whole wheat flour)
  • 1 cup large flake oats
  • 1 tsp kosher salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ cup sunflower seeds
  • ¼ cup flaxseeds
  • ¼ cup raw pumpkin seeds (pepitas)
  • 2 tbsp chia seeds
  • ½ cup cocoa nibs
  • ½ cup currants
  • 5 oz finely chopped chocolate (dark or semi-sweet, your preference)

Instructions

  1. Preheat your oven to 375ºF (190ºC). Line several baking sheets with parchment paper or silicone mats.
  2. In the bowl of a standing mixer fitted with the paddle attachment, or using a large bowl and a hand mixer, beat the softened butter with both the granulated and brown sugars until the mixture is light, fluffy, and well combined. This should take about 2 full minutes, allowing air to incorporate. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next, then mix in the vanilla extract.
  3. In a separate medium bowl, whisk together the all-purpose flour, oat flour, kosher salt, baking powder, and baking soda. Gradually add these dry ingredients to the butter mixture, with the mixer speed on low, until just combined. Be careful not to overmix. Once the dry ingredients are mostly incorporated, gently beat in the remaining ingredients: sunflower seeds, flaxseeds, pumpkin seeds, chia seeds, cocoa nibs, currants, and chopped chocolate. If desired, reserve a small portion of the chopped chocolate and pumpkin seeds for topping the cookies before baking. Mix until everything is evenly distributed but again, do not overmix.
  4. Roll the cookie dough into balls, each approximately 2 tablespoonfuls in size, between your hands. Place the dough balls about 3 inches apart on your prepared baking sheets. Gently flatten each ball slightly with the palm of your hand. If you reserved any chocolate pieces or pumpkin seeds, press a few onto the top of each flattened cookie for a beautiful finish.
  5. Bake for approximately 8 minutes, or until the edges are golden brown but the centers still appear slightly soft and underdone. This ensures a wonderfully chewy interior. Remove the baking sheets from the oven and allow the cookies to cool on the pans for 2 minutes before carefully transferring them to wire racks to cool completely.
