- 1 – 15 oz. pinto beans, drained and rinsed
- 2 – 15 oz. white beans, (try Great Northern or Cannellini beans)
- 1 – 15 oz. corn, drained and rinsed (optional)
- 8 cups chicken broth
- 1 – 12 oz. light beer, (like pilsner or ales)
- 4 cups cooked chicken, cubed or shredded (leftover or rotisserie chicken works great)
- Cilantro, chopped (for garnish)
- Green onions, chopped (for garnish)
- Jalapeños, sliced (for garnish)
- Sour cream, (for garnish)
- Cheese, shredded (for garnish)
Instructions

Heat the 3 Tablespoons of olive oil over medium-high heat in a large pot or Dutch oven. Add the chopped onion and sauté for 2 minutes until it begins to soften.

Stir in the chopped garlic, cumin, oregano, paprika, cayenne pepper, chili powder, salt, and black pepper. Continue to sauté with the onion until the onion becomes soft and translucent, and the spices are fragrant, about 3-5 minutes.

Add the diced green chiles (preferably fire-roasted for enhanced flavor), drained and rinsed pinto beans, drained and rinsed white beans, optional drained corn, chicken broth, and the can of beer. Bring the mixture to a gentle simmer.
