Essential Recipe Ingredients

For the precise ingredient measurements and a complete guide to preparation, please refer to the detailed recipe card conveniently located further down.
- Orzo: We typically use regular orzo for this recipe, which cooks up quickly and has a delightful texture. However, if you’re aiming for a healthier alternative, whole wheat orzo works just as beautifully, offering a slightly nuttier flavor and more fiber. Should orzo not be available, any other small pasta shape, such as ditalini or pastina, can serve as a suitable substitute, though the unique texture of orzo truly enhances the dish. If you enjoy creamy orzo recipes, you might also be interested in my Easy One-Pot Sausage Orzo.
- Shallot: The shallot is a secret weapon in this recipe. Its delicate, sweet, and slightly pungent flavor adds a depth that beautifully balances the acidity of the lemon and the richness of the butter. I highly recommend opting for a fresh shallot if possible, as it imparts a nuanced, earthy undertone that’s unparalleled. If a shallot is hard to find, a quarter of a sweet onion or even red onion, finely diced, can be used as a milder alternative. For those who prefer no onion flavor, you can simply omit it.
- Shrimp: For the best results in any shrimp pasta dish, fresh, raw shrimp is always my top recommendation. Look for medium to large shrimp that are firm and translucent. I always peel, devein, and remove the tails for easier eating, allowing the sauce to coat every piece. However, if you enjoy the presentation or prefer to remove them as you eat, leaving the tails on is perfectly acceptable.
- Lemon: Fresh lemon is absolutely essential here – both the juice and the zest. The zest carries a concentrated burst of citrus oil, adding an intense aromatic brightness, while the juice provides that critical tanginess that balances the savory garlic and shallot. Always use fresh lemon juice; bottled varieties simply don’t offer the same vibrant flavor profile that truly makes this dish shine. It brings a refreshing lift that makes the entire meal feel invigorating.
- White Wine: A dry white wine, such as a crisp Pinot Grigio or Sauvignon Blanc, is a fantastic addition to the sauce. It deglazes the pan, adding complexity and a subtle sweetness as it cooks down, creating a rich, flavorful lemon-infused sauce. The alcohol cooks off, leaving behind only the exquisite flavor. If you’re a fan of shrimp sautéed in white wine, you’ll also love my Shrimp Pesto Pasta with Wine and Garlic. For a non-alcoholic option, a good quality chicken or vegetable broth can be used, though the wine adds a unique depth.
- Unsalted Butter: Essential for building the luscious base of the sauce, providing richness and helping to sauté the aromatics.
- Fresh Parsley: A vibrant herb that adds freshness and a pop of color, completing the dish’s flavor profile.
- Salt and Pepper: To season the dish perfectly and bring out all the individual flavors.
- Parmesan Cheese & Lemon Wedges: For garnish and a final touch of savory goodness and fresh zest.

Step-by-Step Instructions: Crafting Your Perfect Lemon Shrimp and Orzo
Creating this delightful Lemon Shrimp and Orzo is a straightforward process, even for novice cooks. Follow these simple steps for a perfect meal every time:
- Step 1: Cook the Orzo Pasta. Begin by bringing a large pot of generously salted water to a rolling boil. Add the orzo and cook it according to the package directions until it reaches a perfect al dente texture – tender yet with a slight bite. Once cooked, drain the pasta thoroughly and rinse it under cold water. This crucial step prevents the orzo from continuing to cook and becoming mushy, while also preventing it from sticking together. Set the cooled orzo aside.
- Step 2: Sauté Aromatics. While your orzo is cooking, melt the unsalted butter in a large skillet over medium heat. Once the butter is shimmering, add the minced garlic and sauté it for approximately 2 minutes until it becomes fragrant and lightly golden, being careful not to burn it. Next, add the finely diced shallot (or your chosen onion substitute) along with a small sprinkle of salt. Continue to sauté for another 2-3 minutes, stirring occasionally, until the shallot softens and becomes translucent. This builds a foundational layer of flavor for your sauce.

- Step 3: Introduce the Shrimp. Increase the heat slightly if needed. Add the peeled and deveined shrimp to the skillet, along with another dash of salt. Cook the shrimp for about 4-5 minutes, flipping them once halfway through. Watch carefully as shrimp cooks quickly; they are done when they turn a vibrant pink and become opaque throughout. Overcooked shrimp can become tough and rubbery, so timeliness is key.

- Step 4: Create the Zesty Wine Sauce. Pour in the white wine and fresh lemon juice into the skillet with the shrimp and aromatics. Bring the mixture to a gentle simmer and let it cook for an additional 3 minutes. During this time, the alcohol in the wine will cook off, leaving behind a beautifully fragrant and tangy sauce that perfectly complements the shrimp. Remove the skillet from the heat immediately after this step.
- Step 5: Combine and Season. In a large mixing bowl, gently combine the cooked orzo, the flavorful shrimp and sauce mixture from the skillet, the vibrant lemon zest, and the freshly chopped parsley. Stir everything together carefully until all the ingredients are well incorporated and the orzo is thoroughly coated with the sauce. Taste the dish and adjust the seasoning as needed, adding more salt and freshly ground black pepper to your preference.

- Step 6: Serve and Garnish. Your exquisite Lemon Shrimp and Orzo is now ready to be enjoyed! Serve it immediately with a simple green salad for a complete meal. For an extra touch of freshness and flavor, garnish each serving with additional fresh parsley, a few lemon wedges for an extra squeeze of juice, and a generous dusting of freshly grated Parmesan cheese. This dish is best enjoyed warm.
Any delicious leftovers can be stored in an airtight container in the refrigerator for up to 3 days, making it perfect for meal prepping.

Recipe Variations and Customizations for Lemon Garlic Shrimp Orzo
One of the beauties of this Lemon Shrimp and Orzo recipe is its adaptability. Feel free to get creative and customize it to your taste or what you have on hand:
- Pasta Alternatives: While orzo is our preferred choice due to its small size and ability to cling to the sauce, feel free to experiment. Smaller shaped pastas like ditalini, acini di pepe, or even broken vermicelli can work well. The key is to choose a pasta that doesn’t overpower the delicate shrimp and sauce. For a lighter, healthier option, whole wheat pasta varieties are an excellent choice, adding a nutty flavor and increased fiber.
- Add More Vegetables: Boost the nutritional content and flavor by incorporating extra vegetables. Fresh cherry tomatoes, halved, can be added at the end for a burst of juicy sweetness. Blanched green beans or asparagus spears offer a tender-crisp texture. Peas, either fresh or frozen (added during the last minute of cooking), provide a subtle sweetness. Finely chopped green onions or tender broccoli florets can also be sautéed with the shallots or added with the pasta.
- Cheese Choices: While Parmesan cheese offers a delightful salty, nutty finish, don’t hesitate to explore other cheese options. Crumbled goat cheese can add a creamy tang, while feta cheese brings a salty, briny Mediterranean touch. For a milder, melty component, shredded mozzarella or fresh mozzarella pearls can be stirred in just before serving.
- Spice It Up: If you enjoy a bit of heat, a pinch of red pepper flakes added with the garlic will infuse the dish with a subtle warmth. For a different flavor profile, consider a sprinkle of paprika, a dash of cayenne pepper, dried oregano, or a touch of Italian seasoning during the sautéing process. These spices can deepen the savory notes and add complexity.
- Incorporate Greens: For an extra boost of vitamins and a lovely wilted texture, stir in baby spinach or peppery arugula during the last minute of cooking. The residual heat from the pasta and sauce will perfectly wilt the greens, integrating them seamlessly into the dish.
- Other Flavorful Additions: Unleash your inner chef with these additions:
- Artichoke Hearts: Quartered or chopped canned (drained) or marinated artichoke hearts add a tender, tangy bite.
- Sun-Dried Tomatoes: Oil-packed sun-dried tomatoes, thinly sliced, offer a concentrated sweet and savory flavor that pairs wonderfully with lemon and shrimp.
- Olives: Sliced Kalamata or Castelvetrano olives can introduce a salty, briny counterpoint.
- Roasted Red Peppers: Jarred roasted red peppers, diced, add a sweet, smoky element.
- Capers: These tiny briny buds contribute a pungent, salty burst that brightens the sauce.

Storage Tips for Lemon Shrimp and Orzo
This Lemon Shrimp and Orzo recipe is just as delightful the next day, making it an excellent option for meal prep or enjoying leftovers. To ensure its freshness and flavor:
- Refrigeration: Allow the dish to cool completely to room temperature (this usually takes about 30-60 minutes) before storing. Transfer the cooled Lemon Shrimp and Orzo into an airtight container. Store it in the refrigerator for up to 3 days. Beyond this, the quality of the shrimp can start to diminish.
- Reheating: When you’re ready to enjoy your leftovers, you have a couple of easy reheating options.
- Skillet Method: For best results, gently reheat the pasta in a non-stick skillet over medium-low heat. Add a splash of chicken broth, water, or a pat of butter to help moisten the pasta and prevent it from drying out. Stir frequently until heated through. This method helps maintain the texture of the orzo and shrimp.
- Microwave Method: For a quicker reheat, place a single serving in a microwave-safe dish. Add a tablespoon of water or broth, cover loosely, and microwave on medium power for 1-2 minutes, stirring halfway through, until thoroughly warmed. Be careful not to overcook the shrimp in the microwave, as it can become rubbery.
- Freezing: Freezing is generally not recommended for this dish. Pasta, especially orzo, can become mushy upon thawing and reheating, and shrimp’s texture tends to suffer significantly, becoming rubbery. It’s best enjoyed fresh or within the recommended refrigeration period.
Frequently Asked Questions About Lemon Shrimp and Orzo
While either fresh or frozen shrimp will work for this recipe, I highly recommend using fresh shrimp if you have access to it. Fresh shrimp generally offers a better texture and flavor. If you opt for frozen shrimp, ensure you thaw them properly before cooking. The best way to do this is to transfer them to the refrigerator overnight. Alternatively, for a quicker thaw, place the frozen shrimp in a colander under cold running water for about 15-20 minutes, or submerge them in a bowl of cold water, changing the water every 5-10 minutes, until fully thawed.
Shrimp cooks very quickly, and it’s essential not to overcook it to prevent it from becoming tough and rubbery. You’ll know shrimp is fully cooked when it changes color from translucent gray to an opaque pink throughout. The tails will also typically curl into a loose “C” shape. If they curl into a tight “O,” they are likely overcooked. As soon as they reach that beautiful pink opacity, remove them from the heat.
Orzo is a small pasta that can sometimes clump together. To prevent this, follow a few key steps: First, ensure you cook it in a large pot with plenty of boiling, salted water, giving the pasta room to move. Stir frequently during cooking to prevent it from sticking to the bottom of the pot or to itself. After draining, rinsing the cooked orzo under cold water helps to remove excess starch and stop the cooking process, further reducing stickiness. Finally, tossing the drained orzo with a tiny drizzle of olive oil before setting it aside can also create a light coating that prevents clumping.
For this dish, you’ll want a light, crisp, and bright dry white wine. Excellent choices include Pinot Grigio, Sauvignon Blanc, or an unoaked Chardonnay. These wines complement the lemon and seafood without overpowering the delicate flavors. Avoid sweeter wines or heavily oaked Chardonnays, as they can alter the intended taste profile. If you prefer not to use wine, a good quality chicken or vegetable broth can be substituted, though it will yield a slightly different, less complex flavor.

By Julia Jolliff
Lemon Shrimp and Orzo is a light, zesty shrimp recipe that mixes orzo pasta with garlic, shallot, shrimp, butter, lemon juice and white wine to create a simple, elegant and delicious meal.
Video
Ingredients
- 1 cup orzo
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 small shallot (or sub in 1/4 of a sweet onion, diced)
- 1 pound raw shrimp, peeled and deveined, tails removed
- 1/2 of a lemon, juiced and zested
- 1/2 cup white wine (I used pinot grigio)
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Freshly grated parmesan cheese, for garnish
- Lemon slices to serve with
Instructions
- Bring a large pot of salted water to a boil. Cook the orzo according to the package directions. Drain, rinse under cold water so it stops cooking and set aside.
- While the pasta cooks, heat the butter in a large skillet over medium heat. Sauté the garlic for 2 minutes.
- Add the shallot (or onion) and a sprinkle of salt and sauté for 2-3 minutes until the onion is soft.
- Add the shrimp and a dash of salt and cook until the shrimp turns pink, about 4-5 minutes.
- Add the white wine and lemon juice and simmer for 3 more minutes.
- Remove the shrimp from the stove.
- In a large mixing bowl, add the orzo, shrimp mixture, zest of the lemon, and parsley, and stir gently. Taste and add salt and pepper. Serve the orzo shrimp with additional fresh parsley, lemon wedges, and Parmesan cheese.
Notes
- You can use onion in place of the shallot, but I highly suggest the shallot for its unique flavor.
- I like to take the tails off the shrimp before cooking them, but you can leave them on if you prefer and remove them when you eat them.
