Crispy Sweet Potato Fritters with Herb Yogurt Dip

featured 95027

Shredded (not mashed) sweet potatoes give these Sweet Potato Fritters crisp, lacy edges, while feta and green onion keep them savory rather than sweet. A simple lemon-herb yogurt sauce elevates them for guests yet keeps the dish approachable for a weeknight. Fry, bake, or air fry depending on how much hands-on time you want.

Crispy sweet potato fritters with feta stacked on a plate with lemon herb yogurt sauce

I’ve made plenty of fritters over the years, but sweet potato fritters are the ones my kids request by name. The vibrant color draws them to the table, and the crunchy edges mean they eat the whole plate without complaint. These are in the same family as my beloved Zucchini Fritters, but with a sweeter, more substantial base.

This recipe started on a typical Tuesday with two sweet potatoes in the pantry and a block of feta in the fridge. What began as “let’s fry these and see” turned into a household favorite. The lemon-herb yogurt sauce was almost an afterthought, but now I rarely serve the fritters without it. If you prefer, a tahini-yogurt drizzle or a dill dressing are also excellent pairings. Use the frying method for the crispiest edges; bake or air fry when you want a simpler cleanup. The recipe scales well, making it easy to double for meal prep or freezing.

Crisp Apple and Fennel Salad with Lemon Vinaigrette

featured 94964

This apple fennel salad combines paper-thin fennel and apple with crunchy celery, peppery arugula, toasted pecans, and ribbons of shaved Parmesan, all coated in a bright maple-Dijon vinaigrette. It’s a crisp, refreshing side that takes about 20 minutes to prepare and holds up well in the refrigerator, making it ideal for weeknight dinners, potlucks, and make-ahead meals.

Apple fennel salad with pecans and shaved Parmesan in a white bowl

I love the contrast of a pale fennel bulb beside crisp apples in the market—unassuming until you shave them thin and let their textures and flavors mingle. This Apple Fennel Salad starts with those two stars: shaved fennel and apple. Add thinly sliced celery and a touch of red onion, and nestle everything on a bed of baby arugula. Toasted pecans bring a warm crunch and shaved Parmesan offers salty richness. Each ingredient serves a specific role, so the salad feels balanced and complete rather than scattered.

The maple-Dijon vinaigrette is the finishing touch: maple syrup lends gentle sweetness, apple cider vinegar adds bright tang, and Dijon mustard gives a touch of bite to balance the nuts and cheese. Because the base ingredients are sturdy—especially the fennel, apple, and celery—this salad keeps its texture in the fridge longer than most green salads, so you can prep ahead without worrying about a watery, wilted result.
